Perfect for meat and sweets: my recipe for homemade wine from cherry plums and plums from the Caucasus

This summer, my family and I rested in the Caucasus with relatives. My aunt is from that area and knows a lot of secret wine recipes. So, once I tasted the wine, I did not immediately understand what it was made of.

It was red, but it was a very strange taste that I really liked. I decided to find out the recipe, to my surprise, this wine included plum and cherry plum. I was very lucky, because I had these trees in my yard, and I brought cherry plum from the Caucasus.

Why I decided to make alcohol myself

Arriving home, I decided to try to make such a wine. It was interesting to me, because I had never dealt with cherry plum before. I wanted my friends to taste the same wine that my Caucasian relatives treated me to.

Some of my friends living in Russia had no idea at all what kind of “fruit” this is – cherry plum. Plus, I wanted to treat my grandfather, who previously lived in the Caucasus, and then moved here.

I wondered if he recognized the ingredients in this wine. And my grandfather, I must say, is experienced in this matter – he drives moonshine and makes tinctures.

And another reason why I wanted to make this particular wine was simple. I love unusual flavor combinations. Without thinking twice, I went to pick berries for my future masterpiece.

What ingredients are required

My new wine does not need a lot of ingredients. Let’s start with the main raw materials – for any wine I take fallen berries, you can even cracked ones, it won’t get worse. I made a preparation for a liter of wine (in the end it will turn out more).

This volume will need a liter of pulp, which means we collect 500 grams of cherry plum and 500 grams of plum. Perhaps more will be needed, we weigh everything after the bones have already been removed.

I did this – I removed the bones, and put the berries in a liter jar, so you can cope without weights (fortunately, homemade wine does not require exact numbers). We also need water – spring or purchased – and sugar. That’s all, there are not so many ingredients.

And if we talk about devices, then we need a jar, a glove and gauze. The usual list for making fruit wine. The recipe is very simple, and you will certainly be able to make the same wine. So let’s get started.

The cooking process

So, we separate the berries from the seeds, do not throw the seeds away yet. The pulp is placed in a liter jar. Berries do not need to be washed, if they are already completely dirty, then wipe them with a dry cloth. The peel contains wild yeast, which is very important in the preparation of any wine.

Seperate plums and plums from pits

When the berries are ready, grind them with a blender to get a homogeneous gruel. You should get a liter of pulp (crushed berries and juice from them), if not enough, then add more berries.

Pour it into a three-liter jar and fill with a liter of water. The bones can also be washed with water if there is any pulp left on them, and then discard them without regret. We put a glove on the throat of the jar. We put in a dark place for 2 days. During this time, the pulp should separate and rise.

Once the pulp is at the top, it’s time to strain the wine. We separate the pulp from the wort, the pulp can be thrown away, but add sugar to the wort – about 200 grams per liter. We put on the glove again, but we make a small puncture in it so that gases come out little by little.

We put in a dark place for a week. Don’t forget to shake the wine regularly. After a week, add another 200 grams of sugar. Put it back in a dark corner, but now for three weeks.

Shake at least 2-3 times a day to mix everything. After three weeks, if the glove has fallen off, it can be bottled. Put them in the basement for another 2 months.

What result did I get

When you bottle the wine, you can taste it. If you like it sweeter, then sugar can be added directly to the finished wine.

Personally, I prefer sour wines, so I didn’t add anything else. Two months later, the wine is completely ready. It goes well with both meat and sweets.

My grandfather was able to recognize the ingredients of my wine, but my friends were not. But everyone liked it, it has a very unusual taste. I’m going to put another 3-liter jar, otherwise it’s already over.
