“Five Minute”
Peaches cut into slices in the finished dish, due to minimal processing, will retain a maximum of nutrients. It will take 1 kg of pitted fruit, 1,5 kg of granulated sugar and 1 glass of water.
Chopped fruits are poured into a saucepan or basin, syrup should be boiled from sugar and water and poured over fruit. Then drain the syrup back, boil, removing the foam, re-fill the fruit mixture. After the third time, ready-made peach sugar jam can be packed in sterile jars and sent to infuse in a blanket.
Slices
According to the recipe, the dessert is boiled in its own juice, it does not need to be boiled three times, it is cooked over low heat, poured into heated jars while still hot. Requires 1 kg of fruit, 0,8 kg of sugar, half a slice of lemon, and 1 vanilla pod, but optional.
After washing and drying, dense and unripe peaches are cut into slices, placed in a copper or enamel bowl, sprinkling layers of sugar, let it brew for 2 hours. When a lot of juice appears, boil and cook further on low heat for no more than 30 minutes, stirring with a wooden spatula and removing the foam.
With bones
Sweetness is made from whole fruits of small size in the amount of 1 kg with the addition of 0,8 kg of sugar.
Fruits only need to be washed with tap water, pierced in several places with a toothpick, poured into a large container – a basin or saucepan, add granulated sugar and leave for about 4 hours.
Then the sweet mass, which let the juice in, should be boiled over low heat, the cooking time is up to 2,5 hours. Now the resulting delicacy can be laid out in sterile jars and sent for storage.
With nectarines
Be sure to try to make a delicious jam obtained from nectarines in tandem with peaches for the winter, for which you need 800 g of nectarines and 700 g of peaches. Also prepare 1,2 kg of sugar, 60 ml of lemon juice and 225 ml of water.
The peel is removed from hard ripe peaches, you can facilitate the procedure by placing them in boiling water for 2 minutes. Both peaches and nectarines should be cut into pieces and the pits removed. A syrup of sugar and water with lemon juice is brought to a temperature of at least 38 °C. Fruits are placed there and infused for 20 minutes, the sweet mass is boiled and left covered with gauze for a day.
Heat treatment is carried out for the third time until bubbles appear, the composition is boiled down for another 8-10 minutes. Treats can be packaged in jars, rolled up and, after cooling, put away for storage in a dark, cool place.
In the multivariate
Interesting options for a favorite treat from childhood are obtained when cooking in household appliances – such as a slow cooker. Try making a peach dessert with 1,6 kg of fruit and 5 oranges, using another 1,25 kg of sugar and 120 ml of water.
Prepare the peaches: wash, dry, pour over boiling water and remove the peel. Cut in half and remove the seeds. Peel citrus fruits by removing white films and chopping into cubes. Place the fruit mass in the bowl of the device along with sugar and water, setting the “Dessert” mode. After 10 minutes, the composition is mixed, then another 1,5 hours are cooked.
The treat is poured still hot into sterile warm jars. Exquisite sweetness, slightly reminiscent of confiture in consistency, can also be made in a bread machine.
