There is far from one recipe for pancakes with sour milk, but each of them is interesting and unusual in its own way, original and quite simple. There are many types of pancakes. From France came thin and delicate ones, from England – small ones, more like our pancakes, but the Slavs diversified the national cuisine with lush and hearty pancakes.

Pancakes with sour milk always turn out to be airy, despite their bulk and apparent heaviness. They are perfect for those who do not really like sugary-sweet treats, but will not give up a flour dessert. But, of course, in order for the dish to succeed, you need to follow some instructions, even though the recipe for pancakes with sour milk is quite elementary. First, put all the necessary ingredients closer together:
450 g of flour (better still wheat); 1 teaspoon of sugar (for those with a sweet tooth – a little more); about 1/3 teaspoon of salt (only fine); the same amount of soda; 1 egg; 500 ml of sour milk (you can take kefir, then you may have to add it a little, judging by the consistency); butter (for greasing pancakes or for frying).
And now in more detail about how to make pancakes with milk, almost step by step. To begin with, you need to pour about half of the yogurt (or kefir) taken into a small container and throw soda there for extinguishing. Then flour is sifted into a separate (large enough) bowl. Do not neglect this step. Thus, the flour is saturated with oxygen, and the pancakes will rise with a guarantee and will be fabulously light, airy.
Then an egg is broken into a depression made of sifted flour, sugar and salt are added. The remaining half of the milk is also sent there. All products are thoroughly mixed. So far, this is just a blank. Nevertheless, already in the resulting mass, you need to try to avoid lumps.
Now you can pour in the soda quenched earlier in the liquid and quickly and quickly mix the dough, almost beat it (just don’t use a mixer, an ordinary tablespoon is fine). How to bake pancakes in sour milk
To prevent sour milk pancakes from burning, but fried, you need to skillfully prepare everything for frying. It is desirable that the pan is deeper, but thinner. In any case, you need to warm it up well, grease it with a piece of bacon (unsalted, of course) or throw a piece of butter on it. If there is a chance that a future local culinary masterpiece will burn, you can use the usual vegetable oil (better refined, it will not drown out the taste of pancakes).
