An old Russian dish – pancakes, it will not leave anyone indifferent. There is a huge variety of recipes for their preparation, each housewife will find the best options for herself. For example, pancakes with mushrooms are a hearty, tasty dish that is great for a vegetarian or lean table.
Any edible mushrooms are suitable for the filling – champignons, porcini mushrooms, aspen mushrooms, boletus mushrooms, honey mushrooms, boletus, chanterelles, etc. If you intend to use conditionally edible mushrooms, for example, lines, then you must first boil them, drain the water, boil again and only then fry.
To make the mushrooms tender and soft, you need to boil them until half cooked, then drain and fry with finely chopped onions in vegetable oil, until golden brown. You will get a juicy and fatty filling if you first fry the cracklings and onions in boiling oil, then add the chopped mushrooms, mix quickly and close the lid. Mushrooms go well with carrots, potatoes, zucchini, so you can make a mixed filling. Delicate and satisfying pancakes with mushrooms and cheese are obtained.
Pancakes with mushrooms like grandma’s
According to this recipe, pancakes should be elastic, thin and not too laced so that the filling does not fall out of them. For the test you will need:
– 200 g of wheat flour; – 500 ml of milk; – 3 eggs; – 1 tsp. sugar; – 2 tbsp. vegetable oil; – salt to taste.
First you need to beat the eggs, add milk, sugar, salt to them. Continuously stirring, add flour. To make the pancakes more elastic and strong, you can replace some of the flour with potato starch. The dough will be smooth and lump-free if you beat it with a whisk or blender. The pancakes should be thin, so the dough should not be much thicker than kefir.
Heat a frying pan with a thick bottom on the stove, add oil and reduce heat. Pour the dough with a ladle in the center of the pan, then pour it in a circular motion over the entire area. When the pancake is fried on one side, pick it up with a spatula and gently turn it over.

It is best to wrap the filling in hot pancakes until the edges are crispy. Put a little filling in the center of the pancake, wrap the top edge, then the sides and turn the stuffed part over to the bottom edge so that the pancake does not open. You can also wrap the pancakes with a straw.

Pancakes with mushrooms should be put on a dish, garnished with herbs and pieces of vegetables. It is ideally combined with sour cream sauce with garlic or tomato sauce with ginger.
To prepare sour cream sauce with garlic, you will need: – 200 g of sour cream; – 1 tbsp. flour; – 3 cloves of garlic.
Garlic must be peeled, chopped and boiled with sour cream and flour for 5 minutes. The sauce is ready.
To make a tomato sauce with ginger, you will need:
– 200 g of tomatoes; – 10 g of fresh ginger root; – 70 g of sugar; – 10 ml of lemon juice; – salt.
Tomatoes should be peeled and finely chopped, mixed with grated ginger and left in the refrigerator overnight. In the morning, drain the juice and boil it with sugar until it thickens. Then add the remaining tomatoes, pour in the lemon juice and boil for another 10 minutes.
