For the dough: – 6 tablespoons of premium wheat flour; – 3 chicken eggs; – 0,5 liters of milk; – 4 tablespoons of sunflower oil; – 2 tablespoons of granulated sugar; – 0,5 teaspoon of salt.

For the filling: – 700 g of homemade cottage cheese; – sugar to taste; – 100 g of raisins; – vanillin on the tip of a knife.

Instead of raisins, you can use any dried fruits, candied fruits, nuts, fresh fruits or berries. It all depends on your preferences and imagination

For pouring: – 300-400 g sour cream – 3 tablespoons of sugar.

How to make curd-filled pancakes?

First, make your own pancakes. Beat chicken eggs into a prepared bowl, add granulated sugar and salt, beat the mixture thoroughly with a whisk (you can use a mixer or blender to stir). When the granulated sugar has dissolved, pour in the milk and stir. Next, sift the flour twice and add in small portions to the milk-egg mixture, stir well so that no lumps form. As a result, you should get a slightly viscous consistency, close in structure to liquid honey. Add vegetable oil.

When preparing the dough, it should be remembered that the flour should be introduced gradually, the pancakes should not turn out to be dry and steep. If you overdo it with flour, dilute the dough with milk to the desired consistency

Stir the dough again and start frying the pancakes. Put a frying pan on the fire and grease it with vegetable oil, heat it well. Pour the dough with a ladle and spread it well over the surface of the pan in a thin layer. When the edges are golden and there is no raw dough left on the surface of the pancake, feel free to turn the pancake over with a spatula. Pancakes should not stick to the pan, they should be elastic and soft. Do the same with the rest of the test.

Prepare the curd filling. Sort out the raisins, wash them thoroughly and pour boiling water over them for half an hour. This procedure will soften the raisins. To make the filling more tender, it is recommended to rub the cottage cheese through a sieve. Mix cottage cheese with granulated sugar, add vanillin on the tip of a knife. Then drain the water from the raisins and dry them, put them in the curd and stir.

Place a tablespoon of curd filling on the center of each pancake. Wrap in the form of an envelope or tube, as you like. Then put the stuffed pancakes in a large frying pan or on a baking sheet, fill them with sour cream, whipped with granulated sugar, send them to an oven preheated to 180 ° C for 20 minutes.
