Turkey stuffed with walnuts
You will need: – 1 turkey; – 500 g of shelled walnuts; – 100 g stale rolls; – 500 g of liver; – 70 g butter; – 4 eggs; – salt; – freshly ground black pepper.
Rinse the liver and fry it in hot butter until half cooked. Pass the liver through a meat grinder and then strain through a colander. Fry the walnut kernels in a dry frying pan and grind finely in a mortar. Add nuts to liver paste. Put the stale loaf soaked in milk and softened butter there. Mix everything thoroughly, season with salt and freshly ground black pepper.
Rinse the turkey carcass thoroughly, pat dry with paper towels, rub with salt and pepper. Stuff the turkey with the resulting liver mixture, sew up the holes, and brush the poultry with melted butter.
Preheat oven to 200 ° C. Place the turkey on a greased baking sheet and place in the oven. Bake by pouring the melted juice over the bird. If the skin starts to burn, reduce heat and cover the turkey with foil.
Put the finished bird on a dish, after removing the threads. Strain the remaining juice on the baking sheet and pour into a gravy boat – you can pour it over each portion before eating. Serve pickled vegetables and pickled apples as a side dish with the turkey.
