Sea bass is a fish with lean white meat with very few bones. You can cook many dishes from this fish, but baked perch turns out to be especially tasty and tender.

Sea bass baked with cheese sauce

The most delicate perch meat goes well with cheese, which gives it a spicy taste. To prepare this dish, you will need: – 1 large sea bass; – 250 g of cheese; – 4 tablespoons of sour cream; – 1 lemon; – 1 large onion; – 1 carrot; – 1 bunch of dill; – pepper to taste; – salt to taste; – seasoning for fish; – herbs.

Peel the onion and cut into thin rings, cut the lemon and carrots into slices, finely chop the dill. Grate the cheese on a coarse grater and mix it with sour cream.

Remove scales and entrails from the perch carcass, then rinse it under running water and pat dry with paper towels. Rub the processed fish inside and out with pepper, seasoning and salt. Make 2-3 horizontal cuts on each side of the perch, put an onion ring in each, and a lemon circle in the belly of the fish. Put the carrots and the remaining onions on a piece of foil, place the perch carcass on top, wrap. Place the fish on a baking sheet and bake in an oven preheated to 190 ° C.

After half an hour, remove the baking sheet from the oven, unfold the foil and brush the fish with cheese sauce. In this form, send her to bake for another 10 minutes. Put the baked perch on a dish along with the vegetables, sprinkle with herbs and cover with lemon wedges.

The sea bass prepared according to this recipe is especially aromatic thanks to the marinade of lemon juice and aromatic herbs. One of the main advantages of this dish is that it is prepared simply and quickly: – 800 g of sea bass fillet; – 3 tablespoons of vegetable oil; – 1 tablespoon of lemon juice; – 1 teaspoon of thyme; – 1 teaspoon of oregano; – 0,5 teaspoon salt; – 0,5 teaspoon ground black pepper.

For the marinade, combine oregano, thyme, salt, pepper, lemon juice and olive oil in a bowl. Cut the perch fillets into portions, place in a deep bowl and cover with the marinade. Refrigerate fish for 30 minutes to soak well.

Put the marinated perch on a greased baking sheet and place in preheated to 200 ° C for 20 minutes. Serve hot.
