Oriental sweets: dessert with a twist

It’s a sweet word dessert… No matter what language of the world it sounds like, the true sweet tooth will always understand what it is about. Moreover, to enjoy an exquisite delicacy, words are not so important. The only wish that I want to express verbally is more desserts, delicious and different.

Turkey can rightly be called the country of sweets, because it has given the world a string of wonderful desserts. Powdered with powdered sugar, the sweetest Turkish delight or a luxurious baklava with a fragrant nut filling and sticky honey is the first thing that everyone who finds himself in Turkey must try. And when the head stops spinning from deliciously sweet aromas and delight, you can start tasting desserts more simply.

If you think that the chicken is hardly suitable for this role, then a dish called “Tavuk Göğsü” will convince you otherwise. This is an ordinary chicken fillet, turned into a tender, melting dessert in your mouth. For its preparation, chopped boiled chicken breast is mixed with rice, sweet milk, flour, butter and spices. Then skilled cooks transform the mass into an airy pudding and sprinkle it liberally with ground nuts and cinnamon. By the way, according to a similar recipe, sweet chicken was prepared for the Turkish sultans during the Ottoman Empire. And we also inherited from those times the wisdom that simply and clearly expresses the attitude of the Turks to the process of eating food: “We will eat sweetly – we will talk sweetly”.

The inhabitants of India contemplate the world around them through the prism of philosophy, and therefore they treat any dishes thoughtfully. Even desserts, in their opinion, should bring the body benefits and health improvement. Apparently, these considerations prompted them to create a vegetable halva, from which the mouth will definitely not be sweet, even if it is eaten in large quantities. Prepare a simple dish from a modest set of products: flour, melted butter and vegetables, most often carrots, sweet potatoes or pumpkins. The chopped vegetables are cooked in flour mixture or cream until they thicken. From the resulting mass, a thick layer is formed, cut it into squares and each is decorated with a nut. In a similar way, halva is made from fruits.

But in the village of Kozhikode, in southern India, halva is prepared according to a proprietary recipe. The main ingredient here is a special variety of wheat flour Maida. It is mixed with melted butter, coconut and pineapple pulp, and crushed cashew nuts. No less popular in these parts is the halva made of rice, which acquires a radically black color at the final stage of cooking.

Devilish pleasure

Where do you think the world’s best devilish dessert is made? Of course, in the city of angels, or rather, in the restaurant Chego, in Los Angeles. The outlandish treat with the promising name Devil’s Tres Leches, or three milks of the devil, more than meets the expectations of those who try it for the first time. Under a gentle milky disguise, a hellish mixture is languishing, capable of kindling a bonfire of delight and vivid sensations from the first spoonful.

In Latin America, where the dessert was born, it was originally prepared from three types of milk and a small amount of seasonings. But after the recipe migrated to the North American continent, it significantly added piquancy. Quite an ordinary sponge cake with the addition of tapioca, roasted peanuts and lemon began to pour a mixture of condensed milk, heartily seasoned with cinnamon and hot Cayenne pepper. By the way, in the same restaurant, guests will be offered an equally incendiary dessert-rice chocolate with thick caramel and chili sauce. In short, a real feast of taste for those who love hot.

Ice cream is a recognized favorite of sweet tooths all over the world. However, with the immense abundance of varieties and fillers of this delicacy, today it is difficult to surprise the sophisticated sweeteners with anything. Yet the chefs of a Filipino restaurant manage to inspire genuine delight of guests again and again. The reason for this is the brand ice cream “Nitro”, which has made the institution famous all over the world. The highlight of the recipe is that the fresh cream, from which the dessert is prepared, is subjected to ultra-fast freezing in liquid nitrogen. It is noteworthy that a similar technology is used in the preparation of rations for space workers, plowing the expanses of the Universe.

The magic freezing procedure invariably takes place with sold-out parties, causing joyful exclamations of the most impressionable restaurant visitors. The dessert menu includes traditional vanilla, apple, peach and lemon ice cream. And the exotic seekers will be offered varieties with the taste of rose or lavender and quite extravagant options-with the taste of bacon with eggs or osmanthus flowers.

Hot Irish confectioners approached the creation of the dessert with a sense of humor. And they kindly offer a “Classic English breakfast”, consisting of scrambled eggs with fried sausage, stewed beans in tomato sauce and flavorful bacon. On closer inspection, it turns out that all this well – fed pleasure is an artful craft, although it is quite edible. The sausage is carefully fashioned from a sponge cake and drizzled with peanut butter. Beans are tiny cookies covered with a white chocolate glaze, floating in an orange-strawberry sauce, among other things. And a completely natural-looking fried egg is a panacota with a fragrant fudge and a slice of lemon instead of the yolk.  Not every sweetmeat will raise his hand to destroy such beauty, although no one has ever voluntarily refused such a treat.

The Scots also managed to give the world a colorful dessert in all respects. In 1995, one clearly hungry sweet tooth suddenly caught up with the idea of a simple recipe-dip a Mars chocolate bar in batter and fry it well in a frying pan. The culinary impromptu was so popular with the people of Scotland that it was included in the menu of a large chain of eateries, and also began to be sold in supermarkets. These chocolate candies in batter cause blissful delight of sweet tooth and permanent shock among nutritionists. 

No matter how tempting the variety of desserts beckoned, the sense of proportion was not canceled. After all, a really good dessert is a rare treat that is enjoyed without fuss.
