Method of preparation

Finely ground natural coffee (p. 357) is poured into a special dish (turkey), sugar is added, poured over with cold water and brought to a boil. Coffee is served in a Turk or poured into coffee cups without straining Cold boiled water is served separately. By special order, oriental coffee is prepared without sugar.
