To clearly show how much the food has risen in price, Rosstat has once again published how much it will cost to cook the most popular New Year’s dish. Wday.ru has compared prices over the past 20 years.

Almost every family in the country has its own version of Olivier: housewives add unusual ingredients to surprise guests and households. But Rosstat calculates the average cost, taking as a basis the most familiar version of Olivier for a family of four. The recipe varies slightly in different years (for example, there was no onion, then it was added), but in general it remains the same:

500 g of boiled potatoes in their uniforms, 4 eggs, 300 g of boiled premium sausage, 200 g of carrots, 500 g of canned cucumbers, 380 g of green peas, a can of mayonnaise (200 g), 100 g of onions.

On the threshold of the new decade, the most beloved New Year’s salad, without which we cannot imagine the main holiday of the year, has risen in price, as all its ingredients have increased in price, except for one – mayonnaise. The irreplaceable gas station has dropped significantly in price, as if having made us a small gift in this difficult year.

  • 1 kg of potatoes – 30 rubles,

  • 1 kg of sausage – 560 rubles,

  • 10 eggs – 86 rubles,

  • 1 kg of carrots – 40 rubles,

According to the specialists of the Federal State Statistics Service, the cost of a grocery set for salad Olivier increased by 4,6 percent. 

Rosstat offers a basic recipe for Olivier for its calculations: half a kilo of canned cucumbers and potatoes, a standard can of green peas, 200 g of carrots, 4 eggs, 300 g of boiled sausage, 100 g of onions and 200 g of mayonnaise for dressing. They did not count salt and pepper, they are already in every home. This year, the main New Year’s salad, according to Rosstat, has risen in price by 4%. All ingredients of the dish have increased in price, except for potatoes. Carrots (by almost 14%) and eggs (by 12,5%) began to cost the most. Sausage and onion increased in value by 4 and 5%, respectively, green peas and cucumbers – by 3%, mayonnaise – by 2%.

Last year, the cost of salad increased by only 3 rubles. At the same time, the price of sausage went up by 11 rubles, the rest of the products – within 1-2 rubles. But eggs fell sharply – by 7 rubles, so the overall result was almost the same as in 2016.

In 2016/2017, the price for lettuce went up slightly – by 4 rubles. Sausage, mayonnaise, cucumbers and peas began to cost more, but eggs and onions fell in price (by 5 and 4 rubles, respectively), which together gave such a picture. The cost of ingredients at the end of 2016 was as follows:

  • 1 kg of potatoes – 19,12 rubles,

  • 1 kg of sausage – 347,5 rubles,

  • 10 eggs – 59,52 rubles,

  • 1 kg of carrots – 25,85 rubles,

A sharp jump in the cost of products in a salad: by 44 rubles. Although potatoes fell in price by almost 7 rubles, but sausage and mayonnaise rose in price by 35 rubles, cucumbers – by 32 rubles, and eggs – by 6 rubles.

In 2014, the price for lettuce rose by 18 rubles. The price of vegetables increased the most over the year: potatoes cost 3 rubles more, carrots – 4 rubles, onions – 5 rubles, and pickled cucumbers – 10 rubles.

For 5 rubles. the price of salad has risen in comparison with 2012. The most significant was the rise in prices for potatoes (by 7 rubles), sausages (by 14 rubles) and eggs (by 13 rubles).

  • 10 eggs – 56,01 rubles,

  • 1 kg of carrots – 27,29 rubles,

The products necessary for the salad have risen in price by 15 rubles over the year. (Rosstat this year did not include onions in the salad, cucumbers – 700 g). The biggest increase was in the cost of sausage – by 18 rubles. But a slight increase also affected the prices of other components of Olivier.

  • 1 kg of potatoes – 16,07 rubles,

  • 1 kg of sausage – 288,23 rubles,

  • 10 eggs – 43,34 rubles,

  • 1 kg of carrots – 24 rubles,

  • 1 kg of canned cucumbers – 97,01 rubles,

  • mayonnaise – 103,09 rubles.

Olivier index in 2011/12 = 222 rubles.

Rosstat considered Olivier without onions and with less mayonnaise (150 g), but with more cucumbers than in the standard recipe (700 g). Taking into account these points, it is difficult to name the exact figure of the increase in the cost of the salad in comparison with 2010. But it can be noted that the price of potatoes returned to the level of 2009, the other vegetables also fell in price. But the sausage did not please, having risen in price by 35 rubles.

In just seven years – from 2004 to 2010 – the cost of a set of products necessary for making Olivier increased by 100 rubles and went over two hundred. The rise in price compared to the previous year amounted to 15 rubles. The cost of potatoes doubled, by 14 rubles, onions – by 10 rubles, carrots – by 13 rubles, sausages – by 12 rubles. RUB 15 was the difference between the cost of products for salad in 2008 and 2009. Eggs, carrots and potatoes became cheaper by 6, 2 and 2,5 rubles. respectively. But this more than covered the growth in the cost of sausage and canned vegetables (both by 16 rubles), as well as mayonnaise (by 4 rubles). Until 2010, Rosstat did not separate pickled vegetables (we are interested in cucumbers) and canned snacks (green peas) in the final table, so we consider their average price the same.

In the crisis year of 2008, there was the sharpest jump in prices: a set of products rose by 34 rubles. The average price tag for sausage increased by 41 rubles. Eggs became more expensive by 5 rubles, canned vegetables and mayonnaise – by 16 rubles. Only onions dropped slightly – by a ruble and a few kopecks.

For the first time, the price of a set of products required for making Olivier has exceeded one hundred rubles. The cost of boiled sausage has jumped up sharply – by 23 rubles. more than in the previous year. Only onion became cheaper – by the ruble.

The cost of ingredients for the year increased by almost 14 rubles. And all the products from the list have gradually risen in price. The strongest was the sausage, which began to cost 18 rubles. more.

Now prices in the 2000s seem almost fabulous. Just imagine: a dozen eggs for 17 rubles! Or a kilogram of sausage for less than 80. Of course, salaries were different then. But how do you want to return the previous prices, at least for a short time, when the salad was “pulled out” by almost five times less than it is now.
