Okroshka is a cold soup based on kvass, however, with the right approach, kvass can be replaced with beer, since the technologies for preparing these drinks are similar, and the differences are only in strength and the addition of hops. In moderation, okroshka on beer is not only tasty, but also a good anti-hangover remedy. Cooking takes no more than 30 minutes.

In order for the dish to resemble the classic kvass okroshka, dark beer of minimal bitterness is required, preferably with rye malt in the composition. In Europe, they produce a separate variety – rye beer (Roggenbier or Rye beer), this is the best option. Of the brands massively sold in Russia, Baltika Velvet, Guinness, Staropramen Dark, Tuborg Black, etc. are suitable.
Making okroshka based on light varieties (Zhigulevskoe, Pilsner, etc.) is advisable only for beer gourmets, such a dish leaves a bright hop aftertaste and bitterness.
Beer should be in the middle or higher price segment, since the cheapest brands with their alcohol tones can spoil the taste of beer okroshka. Also, the drink should be well pre-cooled, especially if it is hot outside.

Ingredients for portions 2:
- red radish – 2 pieces;
- fresh cucumber – 1 piece;
- green onions – 3-4 stalks;
- boiled sausage or meat – 250 grams;
- chicken egg – 1 piece;
- potatoes – 1 piece (medium);
- dark beer – 0,5 liters;
- salt, other seasonings and spices – to taste;
- sour cream or mayonnaise – to taste (optional).
The proportions of the ingredients can be changed at your discretion, increasing or decreasing the amount of any component. On a beer basis, it is appropriate to add more sausage or meat (veal, lamb or pork). It turns out at the same time beer with a snack.

1. Boil potatoes and eggs (hard boiled), then cool to room temperature and peel. If the peel is very rough, also peel the cucumber.
2. Cut the potatoes, eggs, cucumber and sausage (meat) into cubes of 3-5 cm, chop the radish into thin rings (pre-cut off the tips), chop the onion into small pieces.
3. Place all chopped ingredients in a deep bowl. Salt, add other seasonings and spices. Mix. Leave for 3-5 minutes for impregnation.
4. Slowly pour the made “salad” with beer (it will foam a lot). Mix.
5. Okroshka on beer is ready. If desired, you can supplement the dish with fat sour cream or mayonnaise.
