Oat bran – properties and use in the kitchen

Oat grains consist of four layers: fruit and seed coat, aleura layer, endosperm and germ. As the grain enters the mill, it is cleaned of the outer layers. Thus, oat bran is formed as a by-product of the grinding of oat grains into flour or groats.

Oat bran – properties

Oat bran is characterized by a lower content of dietary fiber belonging to the beta-glucan fraction and the highest amount of fat (approx. 7 g of fat per 100 g of dry weight of oat bran) than other bran. However, this fat is a very valuable unsaturated fatty acid that is not produced in the body. Oat bran also contains oleic acid used in anti-cancer prophylaxis.

There are also aventramides in oat grains – bioactive substances that help prevent the formation of fatty deposits in blood vessels, as well as large amounts of B vitamins (especially B6 and B12) and minerals (selenium, magnesium). Thanks to their properties, they support the work of the brain and nervous system, strengthening memory, concentration and enabling faster absorption of knowledge.

Not only can oat bran prevent the feeling of fatigue and irritability, it can also be used as a source of antidepressant substances (it helps to maintain a good mood). In addition, oat bran contributes to the maintenance and growth of muscle mass, increasing endurance and physical performance. They are sometimes used as a support in the prevention of atherosclerosis and its consequences: heart attack and stroke. They also have a positive effect on reducing the so-called bad cholesterol in the blood (LDL cholesterol) and triglycerides. Dietary fiber contained in oat bran is considered a natural probiotic that provides food for intestinal bacteria, contributing to the slower absorption of sugars by the body, thus preventing obesity and diabetes.

It exhibits the properties of binding toxic substances and fatty acids, at the same time contributing to their excretion. Oat bran also strengthens the immune system by intensifying the work of phagocytes, i.e. cells responsible for the absorption of microorganisms. They can be helpful in the prevention of civilization diseases, for example atherosclerosis, obesity, diabetes, and colorectal cancer.

However, it should be remembered that oats are also a source of phytic acid, which hinders the absorption of divalent elements such as magnesium, calcium and iron.

Oat bran – application

Oat bran, without losing its properties during processing, is used in the kitchen as an addition to, among others, salads, salads, soups, desserts, baked goods, bread, pates, potato pancakes, as an ingredient for battering for meat or vegetable chops or supplementing muesli compositions. In addition, oat bran is used in skin care as an ingredient of cleansing masks, especially for acne-prone skin.
