The New Year’s feast has a long-standing culinary tradition, which is regularly observed from year to year. At the same time, I want to surprise my family with something new and unusual. The Sloboda trademark knows how to combine these two aspirations. Its assortment includes a whole collection of mayonnaise, with which you can transform the good old recipes, creating original combinations for every taste.
His Majesty Olivier
The New Year’s table can do without anything, but not without Olivier. And if you add a couple of new touches to the classic recipe, the salad will become even tastier. Boil 400 g of beef pulp, 3 medium carrots and 5 chicken eggs. We clean and cut all this into identical cubes. In the same way, we chop 3-4 pickled cucumbers, a head of onions and a not quite familiar ingredient — a large sweet and sour apple. Mix all the ingredients in a salad bowl, add 200 g of green peas, salt and pepper to taste. We fill the salad with 150 g of sour cream mayonnaise “Sloboda”. Its delicate taste with a light refreshing sourness echoes with juicy apple notes, thus giving the dish a unique harmony. Decorate the finished salad with fresh parsley petals, and guests will remember Olivier in this performance with admiration for a very long time.
Mysterious disappearance of herring
You can fantasize not only with the content, but also with the form. The best way to do this is the favorite herring under a fur coat. Serve the salad in an original way — and you can be sure that it will have new fans! Boil until ready for 3 beets, potatoes and carrots, peel and grate separately. Cut into slices 300 g of herring fillet and mix with the chopped onion. Spread the grated potatoes on the bottom of the glass. We salt it to taste, make a “mesh” of light mayonnaise “Sloboda”, cover with layers of carrots and herring with onions, also smearing with mayonnaise. It will balance the rich taste of fish and organically complement the vegetables. And its airy consistency will make the taste of the salad more delicate. Julien is a frequent and favorite guest at the New Year’s table. And if you add something new to the traditional recipe, it will become even more desirable. Cut 300 g of porcini mushrooms and champignons into small cubes and lightly fry in oil until golden brown. As small as possible, chop a large bunch of spinach and pour it into the pan. Also add here 2-3 garlic cloves passed through the press and 200 g of mayonnaise “Provencal Sloboda”. Thanks to the rich, perfectly balanced taste, it will make the mushrooms an ideal pair and give the whole dish a pleasant creamy tint. Spread the mushroom mass on the cocotnits, cover with grated cheese and bake in the oven for 10 minutes at 200 °C. Garnish the finished julienne with marjoram leaves or finely chopped dill and serve immediately. This hot snack will be an unmistakable success.
Guest from Italy
Among the meat dishes on the New Year’s table, a venerable place is occupied by pork. It is prepared quite simply, and in a variety of variations. We will need 2 kg of pork: the back, the collar or the ham. The main thing is that the meat should have fat streaks. Soak it in a whole piece in a brine of 1 liter of water, lemon juice, 1 tbsp salt and 1 tsp sugar. After thoroughly drying the pork, we make shallow cuts all over the surface and insert garlic slices into them. Rub it with a mixture of thyme, basil, rosemary, thyme and marjoram. And finally, we lubricate the pork with a layer of olive mayonnaise “Sloboda”. Thanks to it, the spice mixture will play with all the facets, and the meat will better reveal its taste. Wrap the pork in foil and bake in the oven for at least an hour at 200 °C. Boiled pork, imbued with the spirit of Italy, will impress even the most experienced gourmets.
Catch the Firebird’s feather
Stuffed duck is sure to become the crowning dish of the holiday. Mix in a bowl 150 g of mayonnaise “Sloboda” on quail eggs, 3 tbsp. l. mustard, a mixture of black, sweet, pink, red and white peppers to taste. The intense and at the same time soft taste of mayonnaise will give the marinade exquisite shades and successfully emphasize the smallest nuances of the duck. Carefully rub it on the prepared carcass weighing 2-2. 5 kg from the outside and from the inside. We leave it to rest in the refrigerator for a couple of hours. Cut into large slices and sprinkle with lemon juice 2 large green apples. We fill them with the duck that has been saturated with marinade, sew up the hole and put it in the baking sleeve with the remaining apple slices. We keep the bird in the oven at 200 °C for 2-3 hours, constantly checking the readiness. The luxurious appearance of the dish is not inferior to its rich palette of flavors.
Wish-granting fish
A win-win option for the main fish dish will be salmon under a cheese crust. Cut 1 kg of fillet into serving pieces, sprinkle with lemon juice with 1 tbsp. l. olive oil and sprinkle with black pepper. While the fish is marinated for 15-20 minutes, grate 300 g of any hard cheese and mix with a chopped bunch of parsley. Put the salmon in a baking dish with foil and put the oven preheated to 200 °C for 5-7 minutes. A new touch will be the mayonnaise “Sloboda” with lemon juice, which we generously lubricate the fish. Its soft velvety taste will give the dish all the tenderness and fresh juicy notes of citrus. On top of the mayonnaise, spread a layer of cheese, herbs and almond petals, again remove the salmon in the oven for another 10 minutes. During this time, the fish will acquire a seductive aroma and unique taste!
Summer in the middle of winter
Some guests are not ready to share the delicious joys of the New Year with everyone, because they observe the Christmas fast. In this case, treat them to a festive lenten pie. Coarsely cut 1 kg of pumpkin pulp, sprinkle with olive oil and bake at 180 °C until softened. Combine the pumpkin in the bowl of a blender with 200 g of pitted dates, 2 tbsp starch, ½ tsp nutmeg and ½ tsp cinnamon. Whisk the ingredients into a puree, if necessary, add honey to taste. Knead the dough from 340 g of flour, 1 tbsp of baking powder, 100 g of sugar, 150 ml of water and 3 tbsp of lean mayonnaise “Sloboda”. It will make the dough pliable and give it a pleasant delicate taste. Tamp it into a greased baking dish, making beautiful sides. Fill the base with pumpkin filling and bake the cake for 30 minutes at 180 °C. This treat will add a festive feast of sunny colors.
