New Year’s Diet Recipes: How to Cut the Calories of Traditional Foods

One day, binge eating, as a rule, does not end. And all the rest of the winter holidays, people eat up the leftovers from the New Year’s table. Therefore, to make your holidays pass light, we have collected dietary recipes for traditional New Year’s dishes that will save you 1500 kcal.
Olivier salad: 154 kcal instead of 500
This salad cannot be called an appetizer. A portion of classic Olivier (200 g) contains 380 to 500 kcal, and in its dietary counterpart – two to three times less.
Ingredients
Smoked breast – 250 g
Boiled potatoes – 150 g
Pickled cucumbers – 150 g
Fresh cucumbers – 150 g
Canned peas – 50 g
Boiled carrots – 50 g
Yogurt without additives – 100 g
Boiled eggs – 3 pieces
Mustard – 5 g
Salt, pepper – to taste.
Rinse the peas from excess salt and sugar in the brine. Chop vegetables and meat, and then season everything with yogurt and mustard.
Caloric value: 154 kcal per serving (200 g).

Herring under a fur coat: 220 kcal instead of 454
Another calorie bomb on the New Year’s table. A portion of salad contains from 400 to 454 kcal. But there is a recipe that will cut the calorie content of the dish in half.
Ingredients
Herring fillet without oil – 300 g
Boiled potatoes – 200 g
Onions – 75 g
Beets – 125 g
Carrots – 120 g
Boiled eggs – 3 pieces
Sour cream 10% or yogurt – 250 g
Mustard – 5 g
Salt, pepper to taste.
For dressing, mix sour cream, mustard and spices. We spread in layers the potatoes, eggs, carrots grated on a coarse grater. Next are pieces of fish, onions and beets. We coat each layer with dressing.
Caloric value: 220 kcal per serving (200 g).
What’s the secret: took fish fillet without oil, removed mayonnaise.
Jellied meat: 96 kcal instead of 350
100 grams of pork jellied meat from 330 to 350 kcal. Still, this meat is not for diet food. Much less calories in beef jelly – 140 kcal. Well, the most dietary options for the dish are chicken jellied meat.
Ingredients
Chicken breast – 1 kg
Carrots – 200 g
Onions – 100 g
Gelatin – 20 g
Black pepper (peas), salt, bay leaf – to taste
Pour the meat up to the top with water, cook over low heat for 15 minutes. Season with salt, add bay leaf and pepper at the end of cooking. Cut the finished meat into pieces. Put chopped onions, carrots, meat in a plate or special molds. Pour all this with hot broth mixed with gelatin, and allow to harden.
Caloric value: 96 kcal per serving (100 g).
What’s the secret: replaced pork with chicken.
French meat: 200 kcal instead of 492
100 g of this traditional dish contains 246 kcal. This means that there are all 400 kcal in a portion. Prepare meat in French from pork, greasing it with mayonnaise. We propose to deviate a little from traditions and keep within 100 kcal per 100 g.
Ingredients:
Chicken fillet – 250 g
Tomato – 180 g
Onions – 150 g
Egg – 1 piece
Cheese (hard and low-fat) – 100 g
Yogurt – 30 g
Black pepper, salt to taste.
Beat the fillets into thin chops. Beat eggs, add to chicken. Salt, pepper and mix everything. Cut the tomatoes into circles, the onions into rings. Rub the cheese on a coarse grater. Place parchment paper on a baking sheet. We spread the chicken first, then the onion, the tomatoes. Lubricate everything with yogurt on top and cover with grated cheese.
Caloric value: 200 kcal per serving (200 g)
What’s the secret: removed mayonnaise, replaced pork with chicken, baked not in butter, but on paper.
Sausage: 179 kcal instead of 300
Purchased sausage is not only very high in calories (100 g smoked sausage – 300 kcal). It’s also not very useful. Therefore, if you cannot do without sandwiches on the festive table, we suggest making homemade sausage.
Ingredients
Turkey fillet – 1 kg
Gelatin – 10 g
Salt, pepper, spices, bay leaves – to taste.
Cook the meat in water with spices until tender. Then cut the turkey into cubes. We tamp the meat tightly into a special shape (you can take a plastic bottle by cutting off the neck). Pour the broth mixed with gelatin over the turkey and leave in the refrigerator overnight.
Caloric value: 179 kcal (100 g)
Napoleon cake: 98 kcal instead of 380
The traditional recipe for New Year’s dessert is, of course, very tasty, but also very high in calories. In “Napoleon” there is a lot of sugar, butter, in some recipes there is also condensed milk. We have found for you a very dietary, and most importantly, very simple and quick recipe.
Ingredients
Lavash – 125 g
Milk 1% – 0,5 L
Egg – 1 piece
Corn starch – 50 g
Water – 50 ml
Sweetener – to taste
Vanillin – a pinch
We cut the lavash into equal parts and fry on both sides in a frying pan until golden brown (in order not to use oil, fry in a non-stick frying pan). Pour milk into a saucepan and put on fire, not boiling. Add the egg, mashed with sweetener and vanilla. We dilute the starch with water and add to the milk. While stirring, cook until thickened. Remove the finished cream from heat and let cool. Cover the fried pita bread layer by layer with cream. Cover the cake with foil and put it in the refrigerator overnight. In the morning, you can decorate the dessert with fresh berries.
Caloric value: 98 kcal per serving (100 g).
