Sushi is a dish that inspires. What else is worth, it seemed, the recently appeared krusushi, which today there are few people to surprise, or miniature sushi, which is a pity! And now a new sushi trend was brought to the court of gourmets.
The famous Japanese chef Nobu Matsuhisa, the founder of the Nobu restaurant chain, came up with the idea of serving sushi in small cups. This way of serving is called Cup Sushi, it is intended to make the dish more accessible to people, making it easier to prepare and consume.
What is Cup Sushi
Cup Sushi, like regular sushi, is made from traditional ingredients without the need for special skills or special tools.
Also, Nobu Matsuhisa also managed to reduce the calorie content of the rolls by replacing the sugar used in their preparation with a natural sweetener called lacanto. It is obtained from the monk fruit, the extract of which is 300 times sweeter than sugar.
At restaurants, Nobu Cup Sushi is served in special miniature cups, but at home you can use sake cups or any small molds. You can eat such sushi both with chopsticks and with a spoon.
How to make Cup Sushi at home
1. First, put the rice in a sieve and rinse it under water 4-5 times until the water is clear.
2. Then – pour water into a saucepan, put rice and bring to a boil. As soon as the water begins to boil, cover and simmer for 15 minutes over low heat. Next, turn off the heat and let the rice stand for 10 minutes.
3. In a small saucepan, mix 250 ml of red vinegar, 160 gr. fructose, 60 gr. salt, 20 ml. mirin rice wine and a 5-centimeter strip of dried kombu seaweed. Heat over medium heat. Once the fructose and salt have dissolved, add another 50 ml of red vinegar. Turn off heat and cool mixture to room temperature.
4. Transfer cooked rice to a large bowl. After – take 150 ml of the vinegar mixture and sprinkle it evenly over the rice, while the rice is still hot, stir the rice with a wooden spoon. Cover the rice with a wet towel and cool. By the way, you can save the remaining vinegar mixture for next time.
5. Put 1-2 tablespoons of rice in a small bowl. Drizzle with soy sauce, nori, and top with thinly sliced fresh seafood or other favorite toppings.
