Scents of autumn
Perfectly warm in the cold julienne with mushrooms. Passeruem in vegetable oil 300 g of mushrooms, cut into strips, with onions. Potatoes with mushrooms — a classic of the genre, which immediately becomes warmer. Brown in oil 5-6 potatoes with cubes. Separately fry the onion until golden brown in half rings. We also cook 700 g of chanterelles and chop them coarsely. Put in a baking dish layers of potatoes, onions and mushrooms, sprinkling with ground garlic and rosemary. Thickly sprinkle them with grated cheese and put them in the oven at 180 °C for 20 minutes. This simple but harmonious combination will appeal to everyone.
Cutlet impromptu
Surprisingly tasty are the mushroom cutlets. Soak in 500 ml of milk yesterday’s loaf slices. Thoroughly wash and clean 1 kg of wild mushrooms, pass through a meat grinder with an onion. Beat 2 eggs with 1 tsp of salt in a fluffy mass, combine it with mushrooms, onions and swollen bread. Put a little salt, favorite spices and coriander to taste, knead the mass well. We make cutlets from it, roll them in breadcrumbs and fry them until they are golden brown. Mashed potatoes will complement them best.
Forest zrazy
Zrazy with mushrooms is another interesting variation. Fry 300 g of raw eggs with an onion, pour out 2 boiled eggs in cubes, salt to taste. Combine 500 g of minced meat with a raw egg, a slice of white bread soaked in milk, season with salt and pepper. We make the same tortillas from this mass, put 2 tsp of filling in the center and pinch the edges, giving the shape of zraz. It remains to roll them in flour and fry them well on all sides. A side dish in the form of buckwheat porridge is perfect here.
Operational lunch
If you need to quickly and deliciously feed your family, prepare spaghetti with mushrooms. Cook 500 g of spaghetti until al dente. Mash 3 tomatoes without skin in mashed potatoes and simmer it in a deep frying pan with onions until a thick mass is obtained. Add 300 g of chopped oyster mushrooms, 150 g of sour cream, salt and spices, simmer until tender. Mix the sauce with the spaghetti in a frying pan, sprinkle with grated cheese and herbs, cover with a lid. The sauce can also be served separately from the pasta. After 5 minutes, the pasta will be soaked with wonderful flavors, and you can serve it to the table.
Italian dinner
A delicious continuation of the theme of Italian cuisine will be lasagna with mushrooms. Finely chop the onion and 400 g of raw mushrooms or any other mushrooms to your taste, simmer under the lid for 10 minutes, stir in 250 g of ricotta. Melt 50 g of butter, add 200 ml of cream and 150 g of grated parmesan. Cover the baking dish with lasagna sheets, put a third of the mushroom filling, pour the cream-cheese sauce. Repeat the layers twice and put the mold in the oven for 30 minutes at 180 °C. This lasagna will add sophistication to a family dinner.
Happiness in pies
Autumn is made for mushroom pies. Rub into a crumb 100 g of butter with 250 g of flour, 2 eggs and 2 tbsp. l. sour cream. Knead the dough and put it in the cold for 40 minutes. Fry separately 400 g of chicken liver cubes and 500 g of opyat plates. Combine them and pour a mixture of 250 g of sour cream, eggs and salt. We tamp the dough into a form with sides, put it in the oven at 200 °C for 10 minutes, then fill it with the filling and bake for another 40 minutes. This cake is good both hot and cold.
Small joys
Homemade cakes and mushroom muffins will delight lovers. Fry until golden brown 300 g of mushrooms in cubes, season with salt and thyme, combine with half a bunch of chopped parsley. Knead the dough from 250 g of flour, 1 tsp of baking powder, 150 ml of milk, eggs and 2 tbsp of olive oil. Add mushrooms with herbs, 100 g of grated cheese and spread the mass on the molds, greased with oil. Bake the muffins for 30 minutes at 200 °C. A great snack for work or school is ready!
