The features of this cheese are not only in the specific taste and aroma, but also in the name. In the modern world, it is often referred to as Munster-Jerome and these two species are absolutely indistinguishable from each other.
The specificity of manufacturing is heating milk to a specific temperature – 32 degrees Celsius. Then it is poured into pre-prepared special containers. A special enzyme called rennet is added to these vessels in equal amounts. Thanks to its use, a specific cheese mass is formed. Already after an hour of stay in containers, salt is added to the substance and sent for further formation of heads.
The almost finished product is sent to a special cellar, where high humidity is maintained. The recipe says that an integral part of the maturation process is the presence of old heads in the same room. Due to this, the process of enzyme metabolism is significantly accelerated and improved.
The final process of preparing Munster is the treatment of each batch with a special saline solution. It is created according to the Vosges source, due to which a specific orange skin is formed on the surface. Inside, the cheese has a special aroma, often repulsive to people.
To prepare 1 kg of such cheese, you will have to spend about 8 liters of cow’s milk.
Ready-to-eat Münster cheese is presented to customers in stores. The final size of one head can have a different value, but ranges from 13 to 19 centimeters. The maximum weight of such a product is a maximum of 500 g. Separately, the munster is made for tourists. The mass of the product is 150 g, and the diameter is not more than 12 cm.
