Moonshine from honey: 2 recipes at home

Surely each of us in the kitchen has gathered a lot of stocks of old honey. Which is a pity to throw away, but you don’t want to use it for cooking or medicinal purposes.

There are no hopeless situations. We recommend that you make homemade honey moonshine. Just don’t confuse it with mead. These are two completely different drinks that differ in production technology, strength and taste.

Any honey is suitable for honey mash: linden, flower, buckwheat, etc. Quality also does not really matter. You can even use slightly spoiled, fermented honey. The taste of the finished product will not be affected by this.

At the exit, we get a good moonshine with a light honey aroma.

Classic honey beer

Ingredients

  1. Honey – 3 l

  2. Water – 10 L

  3. Baker’s pressed yeast – 200 g

Method of preparation

  1. In a saucepan of a suitable volume, mix honey with water.

  2. Then bring the mixture to a boil and boil over low heat for about 10 minutes. Be sure to remove the resulting foam.

  3. Turn off the burner and cool the wort to 27-30 degrees.

  4. Dissolve the yeast in a small amount of warm water and add it to the honey syrup.

  5. Pour the mash into a fermentation tank and install a water seal. We leave in a dark room at a temperature of 18-28 degrees for 10-12 days.

  6. After fermentation is completed, we drain the honey mash from the sediment and then distill it (the distillation technology is described at the end of the article)

Honey mash with sugar

In this recipe, sugar more than doubles the yield of the finished product. It does not affect the aroma and taste in any way.

Ingredients

  1. Honey – 3 kg

  2. Water – 25 L

  3. Granulated sugar – 3 kg

  4. Pressed baker’s yeast – 300 g

Method of preparation

  1. We heat the water to a temperature of 27–30 degrees.

  2. In the prepared water, dissolve honey, sugar, separately diluted yeast and mix everything well until smooth.

  3. Pour the wort into a fermentation tank and install a water seal.

  4. We transfer the mash to a warm place for 7-12 days.

  5. As soon as fermentation stops, the mash will brighten and sediment will fall at the bottom. Before distillation, it must be drained into a clean container.

Technology of distillation into moonshine for 2 recipes

  1. We distill the prepared mash according to one of the above recipes in a cube and collect the product until the fortress drops below 30 degrees in the stream.

  2. Now we need to determine the amount of pure alcohol in the collected product.

  3. At this stage, we dilute the distillate with water up to 20 degrees. Also clean the moonshine with charcoal, but this is optional.

  4. In the process of the second distillation, the first 8–12% of alcohol (“head”) is collected in a separate container. Since due to the content of a high concentration of harmful substances, health problems may arise.

  5. We collect honey moonshine until the fortress drops below 40 degrees in the stream.

  6. Before tasting, we dilute the finished product with water to the desired strength and keep it for a couple of days in a cool place (cellar or refrigerator).
