Moonshine is distinguished by a mild taste, significant strength, and the absence of a strong hangover after consumption.
Preparation of raw materials
Raw materials for a quality drink are usually grown and prepared independently. To do this, wheat, barley, corn, oat and other grains are spread in a thin layer and soaked in warm water. Until the sprouts hatch, make sure that the seeds do not turn sour. Sprouted grains are dried and ground to a state of flour.
They grind raw materials with a meat grinder, coffee grinder, or simply pound, as they have done for a long time.
To activate fermentation processes, cereal malt is diluted in water, yeast, ready-made bread, potatoes and other ingredients are added. Then the mass is insisted and distilled. As a substitute for yeast, hops, peas, sugar are used.
Making malt for recipes
Malt is made from grains of wheat, corn, rye, barley, millet and peas, taken in approximately equal amounts.
For 1 kg of cereal flour, about 4 liters of water are required, for 15-20 liters of malt diluted in water – ½ kg of yeast or 1 kg of peas. In the latter case, the duration of fermentation is increased by 5 days.
Traditional moonshine
This type of moonshine is considered the purest and best.
Ingredients
Flour from a mixture of cereals – any amount
Water is proportional
Yeast (peas) – proportionally
Method of preparation
Boil water and gradually introduce malt into it until you get a mass that resembles jelly in consistency.
Wrap the container with sourdough, wait half a day.
Divide the mass into small bowls, let cool to a warm state, add yeast.
Let the mixture ferment for 5-6 days, overtake.
Bread and potato moonshine
Ingredients
Cereal malt – 2 buckets
Potatoes – 4-5 buckets
Yeast – ½ kg
Method of preparation
Boil the potatoes, ceiling without draining the water.
Put the hot mass into a bulk container, pour in the main part of the malt, knead to the state of jelly.
Cover the mixture with the remnants of cereal flour, leave overnight.
Transfer the sourdough to a barrel, pour in the yeast, let it ferment for about 6 days, overtake.
Moonshine on bread “Multizlakovy”
Ingredients
Malt mix – 2 buckets
Rye/wheat bread – 18-20 loaves
Yeast – ½ kg
Method of preparation
Soak the bread in boiling water, combine with the cereal mass, mix thoroughly.
Wait from 10 hours to half a day.
Put the mixture in a bulk container, add yeast.
Leave to ferment for 5-6 days, overtake.
Simple bread moonshine
Ingredients
Grain – ½ bucket
Black bread – 12 loaves
Water – 16 L
Yeast – 0,8 kg
Method of preparation
Prepare malt in the traditional way.
Soak bread in water, add cereal flour, mix thoroughly.
Introduce yeast into the mixture, let it brew for 1 week in warmth, overtake.
Moonshine “Wheat”
Ingredients
Wheat – 10 kg
Water – 30 L
Yeast – ½ kg
Method of preparation
Make malt according to classical technology.
Pour in water, add yeast, stir until smooth.
Put the container in heat for 6-7 days.
At the end of fermentation overtake.
Moonshine bread “On the hops”
To prepare the drink, you need the mash left over from the previous distillation process.
Ingredients
Wheat/rye – 1 bucket
Dry hops – 50-100 g
Flour – 40-60 g
Potatoes – 2 buckets
Method of preparation
Prepare malt from grains in the traditional way.
Brew hops in water (2-3 l), let it brew a little, decant. Without waiting for cooling, add flour to the broth, leave to steam for half an hour.
Boil potatoes, mash, mix with malt and intoxicating brew.
Dilute the mass with water to a semi-liquid state, transfer to heat.
At the end of fermentation overtake.
Bread and sugar moonshine
Ingredients
Wheat – 4 kg
Water – 29 L
Sugar – 11 kg
Method of preparation
Grind the grains, throw 1 kg of sugar into the resulting flour, pour 3 liters of water, let stand for 5 days in warmth.
Pour 5 kg of sugar into the mass, dilute with water (another 18 l), leave for a week.
Strain the mash and overtake twice.
Introduce the remains of sugar and water into the cake, wait from 1 to 1,5 weeks, drain the liquid and overtake twice.
Special Moonshine
The degree of readiness of the grain during drying is checked by biting: it should crunch.
Ingredients
Grain – 8 kg
Water – 5 buckets
Yeast – ½ kg
Method of preparation
Pour ½ bucket of water over cereal raw materials and leave for 3 days.
Drain the water, put the grain on a baking sheet, let it dry, put it in the oven or oven, dry it well, grind it.
Heat 2 buckets of water, pour into a wooden container, add cereal flour, knead.
After 2 hours, pour the same amount of hot water into the mass, stir.
After 1 hour, add ½ bucket of cold water and pour in the yeast, after mixing the composition well.
Leave the mash warm for 3 days, overtake.
Bread and pea moonshine
If you use sprouted peas, you can do without malt. It turns out about 3 liters of moonshine.
Ingredients
Cereal malt – 3 cups
Peas – 3 kg
Yeast – 0,2 kg
Method of preparation
Grind peas, pour into a pot of boiling water, stirring constantly, boil the mass until thick.
Allow the composition to cool, add malt, mix and leave to brew.
Transfer the mixture to a large container, add yeast, transfer to heat, hold for 5 days, overtake.
Moonshine “Potato-wheat”
The output of the final product is up to 7 liters.
Ingredients
Potatoes – 20 kg
Wheat flour – 1 kg
Yeast – ½ kg
Method of preparation
Grind the washed raw potatoes on a grater, pour in well-heated boiled water, accompanying the process with stirring.
Introduce flour into the potato mass, let stand, decant the liquid.
Pour the thickening again with heated water, insist and decant.
Mix two potato infusions, add soaked yeast, leave for a period of one and a half to two weeks, overtake.
Moonshine “Potato-oatmeal”
Subject to the above proportions, you will get about 9 liters of drink.
Ingredients
Oats – 6 kg
Potatoes – 10 kg
Yeast – ½ kg
Method of preparation
Rinse the potatoes well, grind.
Grind oat grains, soak in boiling water, mix thoroughly, gradually adding potato mass.
After 3 hours, pour in 35 liters of water, mix again and add the dissolved yeast.
Close the container tightly, let the mixture brew for 4 days in the dark, overtake.
Moonshine “Rice”
The amount of the finished product will be approximately 4 liters.
Ingredients
Rice – 3 kg
Yeast – 0,2 kg
Malt – 3 cups
Water – 10 L
Method of preparation
Cook rice in the specified volume of water, add malt, knead the mass.
Leave the mixture for half a day, mix again, add yeast, wait 6 days, decant the infusion, overtake.
