How to make potato casserole
Peel the potatoes, cut into 4 pieces and cook in a little water. Finely chop the onion and mushrooms; if you are using frozen mushrooms from the store, you do not need to cut them. Grate the cheese on a coarse grater.
Heat vegetable oil in a skillet and lightly fry the onion in it. When it starts to caramelize, add the minced meat, mash it with a wooden spatula so that there are no lumps, sprinkle with spices, salt, pepper and fry for 6-7 minutes over medium heat. Then add mushrooms to the pan and fry them with minced meat for another 5 minutes.
When the potatoes are boiled, make mashed potatoes too, adding a little water, butter, salt and pepper. You can make a puree with herbs by putting finely chopped dill and parsley in it.
Place half of the mashed potatoes on the bottom of the baking dish. Divide the cheese into three parts. Layer the cheese and minced meat with mushrooms on top of the puree. Sprinkle the minced meat on top with a layer of cheese and add the remaining mashed potatoes. Flatten it. Place the dish in an oven preheated to 200 degrees and bake for 10 minutes.
Make a fill. Stir well the sour cream with the egg and finely chopped garlic, lightly salt and pepper it, you can add a little ground nutmeg. Remove the dish from the oven, make vertical holes in the casserole along its entire surface using a wooden skewer or a 0,5 cm thick rod, there should be enough such holes so that the pouring evenly saturates the casserole inside. Sprinkle the remaining cheese on top of the casserole and pour out the filling. Wait a little for it to be absorbed. Send the casserole back to the oven and bake at 150 degrees for another 10-15 minutes, making sure that the cheese poured on top does not burn. Remove the dish from the oven, cover with a tea towel and let sit for a while. Serve sprinkled with chopped herbs.
