First you need to prepare the sauce, it is better to cook it in advance, so that it has time to infuse and become very tasty. To do this, chop the onion and fry it with the mushrooms in butter.
Fry flour in the other half of the oil. Gently add the fried onions and mushrooms to the flour, stir constantly so that no lumps form.
We boil the milk, carefully pour it into the flour mixture, also stirring continuously. The sauce should be very thick. We leave it to cool and start preparing the minced meat for the cutlets.
You can add onions to the finished minced meat, but this is a matter of taste. Form cutlets with wet hands. Put a portion of mushroom sauce inside each cutlet, which becomes very thick and elastic after cooling.
