Milk ice cream at home
“Give me ice cream, so that without palm oil,” the man meticulously demanded from the saleswoman. She froze her hands while looking for an ice cream suitable for the picky buyer. And we believe that if you want to be sure of the quality of ice cream, make it yourself. And now we’ll tell you how.
To make classic milk ice cream at home, you will need:
– 1,5 liters of milk;
– 300 g of sugar;
– 6 yolks;
– 3 squirrels;
– vanilla extract or vanillin.
Pour milk into a saucepan, add vanilla extract or vanillin for flavoring. Put on low heat, stirring constantly, bring to a boil. If using vanilla extract, strain the milk through a fine sieve and let cool for at least 15 minutes.
Separate 6 yolks into a bowl, add 5-6 tablespoons of sugar and beat with a mixer until foam forms. Temper the yolks by gradually pouring milk into them in a thin stream and stirring constantly. Beat the whites and 2 tablespoons of sugar separately until a firm foam forms.
Pour the milk-yolk mixture into a deep saucepan, put on fire. Stir constantly, bring the mixture until bubbles appear, but not boil, and remove from heat. When the milk has cooled, add the proteins into it and stir.
Cover the resulting liquid with a lid and place in the freezer for 3-4 hours. Mix the mass every 40-50 minutes. Then put in the freezer until completely frozen.
100 grams of this dessert contains about 130 kcal. And, of course, no E-additives, palm oil, stabilizers, emulsifiers. The indisputable plus is the low fat content, only 3,5 percent.
To enhance the beneficial properties of homemade ice cream, goat’s milk can be used instead of cow’s milk. Goat milk contains much more potassium, calcium, vitamins A, B6, fatty acids, selenium and copper than cow’s milk. In addition, goat milk helps to boost immunity, is easier for the body to digest and is hypoallergenic.
Milk ice cream can be served with jam, sauce, condensed milk, or berries, pieces of fruit or nuts can be used as decoration.

Chocolate sauce with rum
This sauce must be protected from children and everyone who is contraindicated in alcohol!
You will need: 3 dark chocolate bars; 0,5 cups of sugar; 5 tbsp. l. rum.
Crush chocolate, mix with sugar and rum. Place the bowl of the mixture over the steam and stir until the chocolate is completely dissolved.
Curd sauce
You will need: 200 g of cottage cheese; zest of half a lemon; 0,5 cups of sugar; 200 ml of cream.
Add chopped lemon zest and sugar to slightly warmed cottage cheese. While stirring, pour in the cream in a thin stream until you get the consistency of the sauce.
Raspberry sauce
You will need: 400 g raspberries; 1 tbsp. Sahara; lemon juice.
Grind raspberries in a blender; to get rid of small grains, rub through a sieve, mix with lemon juice and sugar. Mix thoroughly – the sauce is ready.
