Meatballs are ball-shaped products made from minced meat or fish with various additives: rice, vegetables, bread. Most often meatballs with rice are stewed in sauce and served with it. Since meat or fish balls already contain a variety of vegetable or cereal ingredients, a side dish is not required for these products.

Meatballs with cabbage in sour cream sauce

This unusual dish is best prepared with young cabbage. You can make adjustments to the recipe by adding herbs to the sour cream sauce – for example, a mixture of dried basil, rosemary, thyme and celery.

You will need: – 300 g of beef; – 600 g of white cabbage; – 80 g of butter; – 2 tablespoons of bread crumbs; – 400 ml sour cream; – 50 g of cheese; – 1 onion; – a bunch of parsley; – salt; – freshly ground black pepper.

Rinse the beef, dry it, remove the films. Scroll the meat in a meat grinder along with the onion and bread, salt and pepper and stir well. With wet hands, form the minced meat into balls the size of a small apple.

Remove the top leaves from the cabbage. Cut the head of cabbage vertically into several pieces so that a part of the stump remains in each. Boil water in a saucepan, add salt and lay out the cabbage. Close it with a lid, bring to a boil, then remove the lid for a few minutes, cover again and cook until soft. Discard the cabbage in a colander and dry well.

Grease a deep frying pan with oil, put the cabbage, place the raw meatballs on top. Chop the parsley finely and sprinkle over the dish. Pour sour cream over the contents of the pan. Simmer the meatballs until tender over medium heat, covering the pan with a lid.

Instead of sour cream, you can use milk. Fry a tablespoon of flour in a pan and dilute with warm milk. Boil the mixture until thick, then add salt and pepper

Combine the cheese with breadcrumbs. Open the frying pan, sprinkle the meatballs with the rusk-cheese mixture and place in the oven preheated to 250 ° C. When the cheese is browned, take out the dish, put meatballs and cabbage on warmed-up plates, pouring plenty of sour cream sauce over them. Fresh sour cream can be served separately.

You will need: – 400 g of prepared minced meat from a mixture of beef and pork; – 0,5 cups of rice; – 2 tablespoons of tomato paste; – 1 sweet pepper; – 300 ml sour cream; – 50 g butter; – salt; – freshly ground black pepper.

Tomato paste can be replaced with fresh, skinless tomatoes

Rinse the rice and soak for 1 hour. Then drain the water. Put the rice in the minced meat, add salt and mix well. Form koloboks from the resulting mass and put them in a saucepan. Pour in some hot water and bring to a boil.

Peel the pepper by removing the partitions and seeds, cut the pulp into thin strips. Add it to the crock pot, then add the tomato paste, butter and sour cream. Season with salt and pepper. Cook the dish with the lid closed until the meatballs are soft. Serve with fresh white bread and sour cream.
