Add the chopped carrot and onion to the meat and simmer over medium heat for 5-7 minutes. Transfer the rabbit and vegetables to a baking dish, pour the meat juice from the pan, cover with foil and keep in the oven for 25 minutes at a temperature of 190 °C. Meanwhile, fry 7-8 potatoes with cubes until golden brown. Combine them with the finished meat, and a dish of rabbit and potatoes can be served to the table. For children, it is better to replace fried potatoes with air puree.

Rabbit meat is perfectly combined with spices and sauces. But its true “second half” is sour cream. It will not allow the rabbit to dry out, make it softer and better reveal the aroma. Cooking a dish of rabbit in sour cream also begins with cutting the carcass. Fry 3-4 crushed garlic cloves in a frying pan, remove them, lay out the pieces of meat and lightly brown. We move them to the cauldron, and in a frying pan with garlic oil, fry 2 onions in half rings. Then we send them to the meat. Simmer the rabbit in its own juice under the lid on low heat for an hour. Then transfer it to a baking dish and sprinkle with 800 g of fried mushrooms. Mix the juice that the rabbit gave during stewing, with 400 g of fat sour cream, a pinch of salt and pepper. Pour this sauce over the meat and mushrooms and put them in a preheated 160 °C oven for an hour, put two slices of lemon on top. For those who stoically adhere to diets, rabbit dishes in a slow cooker are just a godsend. Cut the carcass into small pieces and marinate them for at least an hour in a mixture of 1 tbsp Dijon mustard, 1 tbsp apricot jam and 1 clove of crushed garlic. In the bowl of the slow cooker, we simmer the onion and carrot until they are transparent in the “Frying” mode. We spread the pickled pieces of rabbit to them. Carefully mix, pour the mixture with a glass of broth, season with salt, pepper and dried thyme to taste. According to the recipe, we prepare a dietary dish from a rabbit in the “Stewing” mode for 1.5-2 hours. Small children can also be given it without fear. It contains a lot of protein, which is easily and quickly absorbed. In addition, in this version, the rabbit turns out to be especially tender.
World Soup
Fragrant rabbit meat soup is a dish that will undoubtedly decorate family dinners. We will need 800 g of rabbit meat on the bone. Cut it into pieces, pour 2 liters of water and cook for about 1.5 hours, not forgetting to remove the foam. Then we take out the meat, separate it from the bones and finely chop it. Strain the broth through cheesecloth. Fry in a frying pan chopped onion and 2 cloves of garlic, 1 small carrot, cut into cubes. Fill them with ½ cup of dry white wine and evaporate by half. We send the crushed sweet pepper to the meat broth, followed by garlic-onion frying and 100 g of green peas. Bring the mixture to a boil and cook for 5-7 minutes. Next, spread the rabbit pieces, salt and pepper to taste, simmer the soup for another 5 minutes. This delicious rabbit dish will be successfully complemented with fresh herbs. And the final chord will be a spoonful of cool sour cream before serving.
The miracle in the pot
Pot roast-a great recipe for a second course of rabbit, which will not resist even the most sophisticated fastidious. Cut 5 potatoes into thin long strips, half spread on the bottom of the pots. Rabbit meat weighing 500-600 g is cut into pieces and placed on top of the potatoes. The next layer — 2 heads of onions in large semi-rings. Next, put 200 g of chopped mushrooms. Sprinkle the mushrooms with grated carrots, chopped herbs and crushed garlic clove. The remaining potatoes complete the composition.
