Meat filling for a hamburger: how to cook it right?
A hamburger is a cut bun with a chopped fried cutlet inside. It is complemented with a variety of seasonings, herbs and vegetables.
Most often, the meat filling for a hamburger is made from first-class chopped beef – sirloin or rump. Moreover, the minced meat made by yourself turns out to be tastier.
The filling for a hamburger should be juicy, moderately soft, rich in taste and mouth-watering smell. Traditionally, it is made in the form of a small flat round cutlet, the filling of this size and shape fits comfortably between the halves of the bun. The most delicious burgers are made from beef. Choose quality, premium meats such as sirloin, rump, or the bottom of the shoulder. It is better if the beef is young and lean: the filling will turn out to be more juicy, tender and aromatic.
Rinse the selected meat, remove excess fat and films. Pat dry with a paper towel and cut into pieces. Grind the beef twice. The minced meat should be soft and homogeneous, so it will be easier to give it the desired shape.
To prepare the filling for 4 hamburgers you will need:
- 900 g freshly cooked ground beef
- 2 tablespoons vegetable oil
- salt
- freshly ground black pepper
Knead the freshly made homemade minced meat with your hands and mold it into 4 flat round cutlets. Heat the oil in a heavy-bottomed skillet. Place the steaks in it and fry for 3 minutes over medium heat.
During frying, do not press on the steaks, otherwise delicious meat juice will flow out of them, and the filling for the hamburger will turn out to be rather dry.
When finished frying on one side, turn the patties, sprinkle with salt and freshly ground black pepper and cook for another 3 minutes. If you want well-done steaks, extend the cooking by an additional 1–2 minutes. Remove the steaks from the pan and keep warm until serving.
Putting the hamburger together correctly
You will need:
- 4 meat patties
- 1 bulb
- 1 large sweet tomato
- green salad (iceberg, lettuce, or romano)
- 4 buns sprinkled with sesame seeds
- roast potatoes
- sauces
Cut the tomatoes into thick circles, the onion into rings. Rinse the salad well and dry. Take 4 large juicy leaves.
Cut the special burger buns in half. On the bottom half, place a leaf of lettuce, cooked steak, and a circle of tomato. Place a couple of onion rings on top and cover with the top half of the bun. Serve with a mound of hot fries and a sauce such as ketchup, mayonnaise, mustard, or hot barbecue seasoning.
Do you like spicy food? You can prepare burgers differently. Before placing the steaks, lightly grease the bun with hot tomato sauce, and replace the tomato with pickled cucumber.
