Meat bread is a classic dish of comfortable home cooking. Hearty and aromatic, it is wonderful both hot and cold, even capricious children love such a loaf, but housewives like it because its recipe is very simple.
Ingredients for Nutritious Meat Bread
For a classic meatloaf, take: – 2 tablespoons unsalted butter; – 1 glass of chopped onions; – 1 stalk of celery; – 4 peeled garlic cloves; – 1 peeled carrot; – ½ cup chopped green onions; – 2 teaspoons of finely ground salt; – ½ teaspoon freshly ground black pepper; 2 teaspoons of Worcester sauce 2/3 cup ketchup – 750 grams of ground beef; – 300 grams of minced pork; – 1 cup fresh bread crumbs; – 2 large chicken eggs; – 1/3 cup chopped parsley; – a pinch of dill seeds.
Bell peppers, cheese such as parmesan, cheddar or feta, balsamic vinegar, basil and dried tomatoes, Dijon mustard are also added to meat bread, but with all these ingredients, the recipe ceases to be classic.
A simple recipe for nutritious meat bread
Cut the celery stalk into small cubes, peel and grate the carrots, peel the garlic and pass through a press. In a large heavy skillet, melt the butter over medium heat. When the oil begins to foam, add the onions, green onions, celery, grated carrots, chopped garlic and stir-fry for 5 minutes, until the carrots and celery are tender. Season with salt and pepper, add Worcestershire sauce and 1/3 cup ketchup. Stir and simmer for about a minute. Remove from heat and let cool.
Worcestershire or Worcestershire sauce is a famous English sweet and sour fermented seasoning. If you don’t have one, try replacing the sauce with balsamic vinegar.
In a large, deep bowl, combine both minced meat with cooled vegetable mixture. Whisk the eggs lightly and add them to the bowl along with the bread crumbs and parsley. Knead the minced meat well and place in a baking dish. A tall pewter muffin tin is ideal. Lubricate the top of the “bread” with ketchup and place in an oven preheated to 180 degrees. Bake the meatloaf for an hour, then refrigerate, gently remove from the mold and cut into slices.
Some housewives do not like to use ketchup, but without it, the meatloaf will not be traditional, classic. If you are confused by the unnaturalness of ketchup, pay attention to the fact that it contains as little starch and gum as possible, with which manufacturers thicken ketchup when they put fewer tomatoes than they should, or make a homemade version of this piquant seasoning.
