Matsutake is an edible mushroom of the Agaricomycetes class, the Tricholoma genus, the Ryadovkovy family. Often still found under the name of Japanese truffle, shod row and pine mushroom. Where does the mushroom grow? This type of fungus can be found in Asian countries, mainly in China, Korea, Japan. It is also real to see matsutake mushroom in the menu of restaurants in Finland, the Far East, Sweden, North America. You can find shod rowing in its habitats, especially at the roots of coniferous trees. It is because of the peculiarities of its cultivation that the fungus received another name pine.

Matsutake has a brown, scaly cap, a twenty-centimeter-long stem that is at least three centimeters thick in diameter. The product has an exquisite spicy flavor, vaguely reminiscent of the taste of Greek white wine. It is problematic to get the product from the soil, since it is located deep in the soil. The mushroom is quite picky about the environment; for its comfortable growth, the maximum temperature for its growth should be twenty-six degrees, and the minimum air temperature is fifteen degrees Celsius with a plus sign. In order for the fungus to develop fully and be saturated with the necessary nutrients, one hundred millimeters of precipitation is needed in 3 weeks.

This product is actively used in cooking, let’s look at a few simple and popular dishes with this product.

Rice with Japanese truffle – for cooking, you need to take five large Japanese truffles, four tablespoons of soy sauce, two large carrots, one hundred and fifty grams of seaweed, one hundred grams of canned peas, one chicken breast, a glass of white long-grain rice. Fry the brisket on both sides with seasonings and salt, cut into pieces. Boil rice with salt (add a piece of butter). Chop the remaining ingredients and mix together (leave to infuse for fifteen minutes so that the mushrooms absorb all the flavors). Put the rice on the plate first, put the chicken breast on top, and pour over the mushroom mixture.

Dobinmushi Matsutake – for cooking, you need to take two large matsutake mushrooms, chop them in a blender or chop them finely. Take three small pots, evenly divide the mushrooms into three portions and place each in pots. Pour half a teaspoon of sake into each pot. We proceed to marinating the chicken breast (procedure time is one hour). Grind chicken breast and marinate in soy sauce. Take three hundred grams of king prawns, peel them and boil until half cooked. Put chicken breast, shrimp in pots, pour shrimp broth and place in a preheated oven for half an hour. Serve the dish hot in pots with rice cakes.

Gratin – for cooking, you need to take half a kilogram of potatoes, three Japanese truffles, two hundred milliliters of ten percent cream, three chicken eggs, two hundred grams of hard cheese, a pinch of ground black pepper, two medium-sized onions. Rinse the mushrooms, chop into slices and fry in vegetable oil with onions. Whisk eggs with cream, salt and pepper. Take a baking sheet, grease it with vegetable oil, lay out sliced ​​potatoes, put a layer of mushrooms on top, pour everything with egg-creamy mass. The top layer is grated cheese. All layers must be uniform. Place the gratin tray in the oven for thirty to forty minutes, until the potatoes are soft and the cheese is golden brown.

Cooking Matsutake Mushrooms with Honey – You need to take Matsutake mushrooms with honey in a ratio of one to one. How to prepare a tincture? Grind the Mushrooms (cut into slices two to four millimeters thick), place them in a half-liter jar, and fill them completely with liquid honey. To prepare the infusion, you need to spend a maximum of fifteen minutes. Jars of tincture should be placed in the refrigerator and left for at least one week. The tincture can be stored in the refrigerator for three months, no more.
