Marshmallow came to our menu from the USA, where this sweet has been popular for a long time. Roasting marshmallows by the fire is exactly the same marshmallow. The sweet dessert is uncomplicated, has a long shelf life and costs a little.
If we consider the history of the emergence of elastic marshmallows, then its roots take us back to Ancient Egypt, where marshmallows were made as a medicine for sore throats and coughs. They included the extract of mallow, marshmallow, from which sweets were made with the addition of honey and nuts.
Then a recipe appeared in France, in which mallow extract and egg yolk meringue and rose water were mixed. This recipe has again been used in the pharmacy industry. At the beginning of the 19th century, French pastry chefs finalized the recipe and began to produce sweets simply as a delicacy, and not as a medicine. With the introduction of new technologies, the process of making sweets from plant juice has become easier, gelatin and starch have been added to the recipe, and marshmallow juice has faded into the background.
In 1948, American Alex Doumack discovered the extrusion process, which made it possible to fully automate production. The marshmallow took on the same shape and began to sprinkle with powdered sugar. In 1961, the company of the same name was founded by Doumack.
Now there are many recipes that use marshmallows. It is primarily an additive to milk frothy coffee. In hot water, the pastilles become softer, more airy and viscous.
Sweet hot cakes are made with marshmallows. To do this, put a melted piece of marshmallow between two crackers and add chocolate. Heated marshmallows are doused in multicolored powdered sugar and used to decorate cakes for children’s parties.
The marshmallows themselves are made in various shapes, which allows them to dominate the decor of various desserts. And marshmallow is also used to make mastic for cakes and pastries, which is quite edible, unlike ordinary mastic.
