Homemade red rowan wine has a tart aroma. But even this is not the main thing. Rowan wine also has healing properties. It supports the immune system, improves blood circulation and metabolic processes in the body. In addition, this drink contains a large amount of vitamins and minerals.
Cooking berries
An intoxicating drink made from mountain ash, prepared at home, can be prepared by any hostess or owner, if there is a desire and patience. But, most importantly, pick the berries in time so that there is no bitterness in the finished drink. That is why fruits are harvested for making wine at home after frost. Due to the fact that the berry is hit by frost, it becomes sweeter, as it increases the sugar content to a maximum.
To make homemade wine from red rowan, you can use wild or cultivated rowan berries. But the most luxurious drink with exquisite taste is obtained from such varieties: Pomegranate, Liquor, Burka. Dessert rowan wine is strong, fragrant.
The preparation of one liter of intoxicating drink requires from 4 to 4,5 kg of berries. Before preparing the must, you need to remove the branches, but it is not necessary to wash it, since it still needs to be poured with boiling water before making wine.
About the beneficial properties of wine
As we have already noted, homemade mountain ash wine is a valuable product. Let’s talk about this in more detail:
- diuretic, choleretic and diaphoretic properties are noted;
- saves from colds;
- promotes easy bowel cleansing;
- stimulates the work of the heart, liver, stomach;

It should be noted that there are also contraindications to the use of homemade mountain ash wine. In the presence of hemophilia or a bleeding disorder, it is better not to even try the drink.
To improve the taste, winemakers add cranberry, apple or other juices to rowan wine. For example, for four servings of rowan juice, six parts of apple juice are added.
How to make wine – recipes
There are a lot of technologies and recipes for making rowan wine, but we will talk about how to make homemade wine from rowan berries simply, without any troubles. The intoxicating drink turns out to be a delicate orange-pinkish color.
The first recipe is a classic of winemaking
To make rowan wine at home, we need the following components:
- rowan – 10 kg;
- water 4 liters (if desired, add apple juice in a ratio of 1: 1);
- granulated sugar – 2 kg;
- raisins – 150 grams (can be replaced with grapes).
Features of preparation
- Before making wine at home, pour berries without petioles with boiling water for half an hour. We will repeat this procedure twice. Thanks to this, there will be less tannins, and the finished wine will not be too tart.
- We pass the prepared berries through a meat grinder and squeeze through a cotton cloth or gauze in several layers.
- We spread the pulp in a bottle with a wide neck and fill it with water with a temperature of 70 degrees. After stirring, let cool to room temperature.
- Then add rowan juice, the first part of granulated sugar, unwashed grapes. Grapes for homemade mountain ash wine are pressed at home, but they do not need to be washed, since a whitish coating on them is responsible for successful fermentation.
- After mixing the ingredients, we tie the neck of the bottle with gauze and put the wort in a warm (18 degrees) and dark place.
- During fermentation, the future rowan wine will begin to foam and a sour smell will be felt. This is the signal: it’s time to filter the wort.
- Add sugar to the juice without the pulp of the berries and set the homemade wine to ferment again. The container must be large so that a third of the vessel is not filled. You need to put on a glove on the bottle, having previously pierced one of the fingers with a needle. Under the influence of gases, the glove will inflate, and by the end of fermentation it will drop.
- The must for homemade wine should ferment for the second time for at least two weeks in a dark and very warm place. It is necessary to maintain the temperature from 20 to 30 degrees. At this time, gas bubbles will be observed in the container, “plying” up and down.
- When the bubbles disappear and the sediment covers the bottom of the container, pour the young rowan wine prepared at home into clean sterilized bottles. This must be done carefully so as not to raise the turbidity.
- We close them hermetically and put them in a cool place at a temperature of no more than 15 degrees. The sun’s rays on the container should not fall. Young wine should stand for about 4 months, it does not need to be touched. During this time, the wine will not only reach the desired condition, but a new sediment will appear at the bottom.
Again, drain from the sediment. Delicious red rowan wine at home according to the classic recipe is ready. We close the bottles, put them horizontally and put them in a cool place.
Such wine, when stored properly, does not deteriorate for several years. Moreover, the longer the exposure, the tastier and sweeter the intoxicating drink becomes.
Recipe for the second
Prepare in advance:
- 2 kg of berries;
- granulated sugar – 2 kg;
- water – 8 liters;
- ammonium chloride – 0,3 grams per liter of wort.
Getting Started
- First you need to cook the rowan. Berries need to be thawed and pour boiling water for half an hour. Then pour over with cold water, let the liquid drain and make puree from red rowan fruits in any convenient way.
- We shift the mass into a large bottle, add water, pour one kilogram of granulated sugar and ammonium. If such an ingredient is not available, replace it with raisins.
- We pull a medical glove on top of the bottle, pierce any finger with a needle first and put it in heat for fermentation.
- After a while, the process stops, it’s time to add the rest of the sugar.
After secondary fermentation, we drain homemade mountain ash wine from the sediment, pour it into clean bottles, and seal it hermetically. The drink will mature for at least four months. Before use, it must be filtered and poured into another container.
The third recipe is simple
Making wine from rowan according to a simple recipe is really not difficult, and the ingredients are minimal: rowan – 2 kg and sugar to taste. As a rule, about one and a half kilograms of granulated sugar is added to 2,5 liters of water.
Defrost the berry and pour over boiling water. Grind in a meat grinder, and then squeeze the juice and pour it into a bottle. Let’s add water and sugar to the future wine at our discretion, after tasting it.
When the granulated sugar is dissolved, put a water seal on the container or put on a rubber glove and leave it for fermentation. When the process is completed, remove the water seal or glove, filter from the sediment and pour into sterile bottles.
Do-it-yourself wine from mountain ash is fragrant, with a tart taste.
Recipe Four
We will need:
- 2 kg of red rowan berries;
- 9 liters of water;
- granulated sugar at discretion;
- a handful of raisins.
We put the thawed and chopped berries for making wine in a large container and pour 9 liters of boiling water. Cover with gauze and leave to ferment. At the very beginning of the process, we filter the base, add sugar.
After dissolving the sugar, immediately pour into bottles, put 3 raisins in each. It does not need to be washed, because yeast fungi are located on its surface.
We close the container with wine hermetically and put it in coolness and darkness. We put the bottles horizontally and wait for about 3-4 months when the fermentation process is completed.

Instead of a conclusion – advice
- If desired, you can use apple juice instead of water, no more than half the volume.
- It is better to take black raisins, with which fermentation is more intense.
- According to recipes, sugar is recommended to be added twice when making wine. But some winemakers divide this process into three parts. This allows you to control the fermentation process and choose the desired sweetness of the wine.
- If you want to get a sweet intoxicating drink, then you can add from 500 grams to 4 kg of sugar, not counting the ingredient indicated in the recipe.
