Los Torreznos in Gastronomy

A gastronomic product that from the hospitality channel reaches homes in various formats, as a jewel of our culinary tradition.

If there is a gastronomic product that is inseparably linked to the province of Soria, it is Torrezno, tender and tasty pork belly streaked, cured and aired in the cold Castilian lands with its tasty lean meat and its golden and crunchy crust.

It is a product that for almost 4 years has been on the market with a Guarantee Mark (thanks to the alliance between the Chamber of Commerce of Soria and the Association of Manufacturers of Torrezno de Soria) and that has served to give quality parameters to a meat product that was already considered exquisite.

In these four production campaigns, under the protection of the quality label, Torrezno de Soria has not stopped growing not only in production but also in knowledge on the part of the hospitality sector and the general public.

La Guarantee Mark Torrezno de Soria certifies the quality of two types of products. On the one hand, the bacon, that is, pork belly marinated with salt and paprika and cured in traditional drying rooms, being the most requested raw material for the production of torreznos. It can also be used in barbecues, stews and stews. It is sold in bulk or vacuum packed, in complete or chopped pieces.

And the second of the products is the precooked torrezno. The new star of the kitchen both for professional consumption and for family consumption at home. We find the strips of marinated bacon semi-fried, and now ready to give the last of the frying, and to be able to present a quality product in a few minutes.

The Torrezno de Soria Guarantee Mark guarantees that the Torrezno that incorporates its label is made according to the rules established in its regulations of use, being different from the others and exclusive to Soria. In addition, a product of the highest quality is ensured, controlled by an external company.

The objectives of the Guarantee Mark are to protect the identity of this proprietary and exclusive product against imitations, fraud and unfair competition; preserve a traditional Soria dish that occupies a place in the gastronomic culture of the province of Soria and guarantee the consumer a unique and quality food based on tradition.

Currently, the Torrezno de Soria Guarantee Brand is made up of seven meat companies in the province of Soria: Embutidos La Hoguera, Cárnicas Hermanos Giaquinta, Cárnicas Sierra de Toranzo, Embutidos Moreno Sáez, Cárnicas Llorente, La Despensa and Embutidos Caba.

It is estimated that in 2017 production will reach one million kilos per year for the first time, but Torrezno de Soria is not only in fashion in Castilla y León but is gradually making its way into the kitchens of large restaurants, on tapas routes and in homes throughout Spain.

65% of the production is consumed outside of Soria, while 18% of the production is sent to the rest of the provinces of the Castilian-Leon community (mainly Burgos and Valladolid), 12,3% to Aragon (almost entirely to Zaragoza capital); 10% to the Basque Country, 7,5% to Madrid capital, 8,4% to La Rioja.

Among the future actions of the producers is to introduce such an exquisite meat product in provinces of the Mediterranean area (mainly Catalonia and Andalusia) and Galicia, places where penetration is less or almost nonexistent.

In addition, work is being done on promoting promotion in two fundamentally sectors. On the one hand, an attempt is made to position the Torrezno de Soria in the great hospitality industry and introduce it into great haute cuisine dishes. And, on the other, create new distribution channels to bring Torrezno closer to homes and present it as another ingredient of great value and flavor.

For this, the Guarantee Mark will maintain its presence in major national gastronomic events such as Madrid Fusión and Salón de Gourmets and will continue its presentations and showcookings in hospitality schools. Before the end of the year, two events will be held in Valladolid and Salamanca to bring this product to the future chefs of these provinces.

In addition, communication will continue to be promoted with press and marketing actions with bloggers and influencers of gastronomy. This year more than twenty actions have already been carried out with cooking and recipe blogs and the presence of the product with several YouTubers stands out, whose video-recipe made with Torrezno have almost 20.000 views.

Torrezno is a product perfectly established in the hospitality sector and can also be obtained in butchers or food stores, and from the digital level through online stores, such as EHOSA’s for hospitality products.
