For example, in our workshop, the differences from GOST are minimal: instead of standard milk, we use dry milk, instead of eggs – dry egg melange.

Nataliya: Any food additive that comes to us for production must have a permit for its use. There are additives without which sausage simply cannot be made. For example, nitrite salt, which fixes the color during heat treatment so that the meat does not turn gray after cooking. After all, no one wants to eat gray sausage. But it is added within the minimum acceptable range.
Vitali: Many more are frightened of the pores in sausages. But, for example, in Germany they work in production without a vacuum, so the pores in the sausage are normal for them. And we are used to a dense homogeneous mass. But the pores do not pose any danger, they are not evidence of poor quality and do not affect the taste of the sausage.
– We have been present on the market for 20 years, and we are always sensitive to changes in the population’s income. Despite the fact that it is costly and not cheap to produce a quality product, we are constantly working with our suppliers of raw materials, with our distributors and trying to find a compromise. All for the sake of Yaroslavl residents and residents of neighboring regions to have the opportunity to purchase natural, high-quality sausage at an affordable price.
Vitali: We prepare the entire assortment from one meat, only the spices change. Both in expensive names and in more budgetary ones, high quality meat is used. Since our butcher shop exists to attract buyers, we can keep prices low for good quality products.
