Lobio in Georgian: we cook with red beans. Video

Fragrant Georgian lobio

Ingredients: – 2 tbsp. dry red beans; – 4 medium onions; – 5 cloves of garlic; – 50 g of cilantro; – 0,5 tsp dried coriander seeds; – a pinch of black and red ground pepper; – 2 bay leaves; – 0,5-1 tsp. salt; – vegetable oil.

Rinse the beans well and soak them in 4-5 glasses of water for 6-8 hours. You can leave it overnight, but no more than 10 hours, otherwise the beans will sour. Change the water a couple of times if possible. Place the swollen beans in a saucepan, cover with cold water and put on fire. Toss a bay leaf to it and cook over medium heat for about an hour, periodically adding cold water. While the main lobio ingredient is cooking, peel the onions and cut them into half rings. Heat the oil and sauté the onions in it until golden. Chop the cilantro finely, crush the garlic and place in the pan as well.

Drain the remaining hot water from the finished beans, squeeze it a little with a press and transfer to the onions and herbs. Reduce heat to low, season with salt to taste, toss in the coriander, season with two kinds of pepper and mix thoroughly. Cover the skillet with a lid and simmer for 3-5 minutes. It turns out to be quite satisfying and for a woman it can become a complete and very nutritious dinner. For the rest of the family, lobio can be prepared as a hot bean side dish or as a cold snack.
