Liver cutlets: recipe. Video

The liver is the most popular by-product, largely due to the high content of substances beneficial to the body. However, not everyone likes its specific taste and smell. Prepare fragrant and hearty cutlets from beef or chicken liver, and even the most inveterate fussy in your family will not refuse such a dish.

Ingredients: – 500 g of beef liver; – 1 onion; – 1 chicken egg; – 2 tsp. flour; – 1 tsp. sour cream; – 0,5 tsp. sugar; – 1 tsp. without a hill of salt – 2-3 feathers of green onions;

– vegetable oil.

Before cooking, the beef liver should be soaked in milk for at least half an hour. This will remove bitterness, a specific smell and soften the offal.

Rinse the liver under running water, remove the ducts and films, dry it and cut into small pieces. Peel the onion and cut into quarters. Pass the liver and onion through a meat grinder or chop in a blender, break an egg there, add sour cream, sugar and salt. Mix everything well and add flour. Stir the minced liver again until smooth.

Heat the vegetable oil and spoon the minced meat into it. Fry the beef liver patties for 2 minutes on each side. Transfer the prepared meatballs to a saucepan, pour in 2-3 tbsp. boiling water, cover and steam the dish for 7 minutes at the lowest temperature. Chop the green onions into rings and sprinkle them over the cutlets before serving. Use rice or mashed potatoes as a side dish.

Cutlets from chicken liver

Ingredients: – 250 g of chicken liver; – 1 chicken egg; – 2 slices of white bread; – 50 ml of milk; – 30 g of hard cheese; – 0,5 tbsp. boiled buckwheat; – a pinch of ground black pepper; – 0,5 tsp. salt; – vegetable oil.

Soak white bread slices in milk. Wash the liver, clean it if necessary, and rotate it through a meat grinder along with the bread mass. Grate the cheese on a fine grater. Add egg, buckwheat, pepper and salt to the minced meat and mix it thoroughly or beat in a blender. Heat vegetable oil in a skillet or saucepan and cook chicken liver patties on both sides for 1,5 minutes. Spread the fried pancakes on a platter. This is a dietary meal, perfect with a fresh salad or simply chopped vegetables.

Creamy sauce for liver cutlets

Ingredients: – 200 g of 20-25% sour cream;

– 2 cloves of garlic; – 20 g of dill; – a pinch of white pepper; – 0,5 tsp. salt.

Chop the dill very finely, removing the thick stems, and mix with the sour cream. Crush the garlic cloves in a special press or grate and throw into the mixture. Pepper it, salt and beat with a broom or mixer. Soak the sour cream sauce in the refrigerator for about an hour while cooking the liver, then pour over the patties or place in a separate bowl on the table.
