The liver is a very useful by-product, rich in B vitamins, as well as A, D, E, complete protein, iron, phosphorus, magnesium, calcium and many other micro and macro elements. The healing properties of the liver were known even in Ancient Egypt and many dishes were prepared from it. Today, beef and chicken livers are indispensable in dietary nutrition. Delicious pies, casseroles, sausages and even snack cakes are made from it.

Beef liver liver cake recipe

To make a beef liver liver cake snack, you will need:

– 700 grams of beef liver; – 200 grams of carrots; – 200 grams of onions; – 3 hard-boiled eggs; – 2 raw eggs; – 100 grams of flour; – 100 milliliters of milk; – 200 grams of mayonnaise; – vegetable oil; – dill or parsley; – ground black pepper; – salt.

Rinse the beef liver, remove the films and pass it raw through a meat grinder. Then pour in milk, beat in raw eggs, add salt, pepper and mix everything thoroughly.

Chicken liver liver cake recipe

To make a liver cake from chicken liver, you need to take: – 1 kilogram of chicken liver; – 2 heads of onions; – 2-3 cloves of garlic;

– 2 raw eggs; – 1 tablespoon of semolina; – 100 grams of flour; – 100 milliliters of milk; – 200 grams of mayonnaise; – vegetable oil; – salt.

Rinse the raw chicken liver, strip from the bile ducts and pass through a meat grinder. Then add milk, beaten eggs, salt and mix everything well. Then add semolina and wheat flour, stir and leave for 10-15 minutes to swell.

Grease a skillet with oil and bake pancakes from the cooked liver dough, frying them on both sides.

Peel the onion, cut into half rings and fry in a separate pan until golden brown.

Brush each baked liver pancake with mayonnaise, sprinkle with fried onions and lay in layers on a dish. Brush the top of the liver cake with mayonnaise mixed with garlic passed through a press. Decorate the cake as desired with chopped herbs, grated cheese, or finely chopped boiled eggs.

Place the finished cake in the refrigerator for several hours to soak.

Chicken or Beef Liver Cake Recipe

To make a snack cake with liver, you will need:

– 300 grams of liver; – 1 onion; – 50 grams of butter; – 30 milliliters of 10% cream; – 200 grams of hard cheese; – 1 hard-boiled egg; – 50 grams of yeast; – 1 kilogram of flour; – 200 milliliters of milk; – 300 grams of mayonnaise; – 250 grams of margarine; – ½ teaspoon of baking soda; – 1 teaspoon of sugar; – salt; – vegetable oil; – a bunch of green onions.

First of all, cook the beef or chicken liver. To do this, rinse the liver, thoroughly strip it of films and bile ducts and cut into small pieces. Peel and finely chop the onions. Fry the liver with onions in vegetable oil. Season with salt and pepper, add a little water and simmer over low heat for 10-15 minutes.

Livers prepared according to this recipe can also be used for sandwiches or served as a stand-alone snack.

Then cool the liver with onions, transfer the mass to a blender and chop until smooth. Add cream and softened butter and whisk into a fluffy creamy mass.

Then knead the dough for the snack cake. Dissolve yeast in warm milk, add a teaspoon of sugar and half a teaspoon of salt and baking soda. Grate chilled margarine and combine with the resulting mixture.

Add flour gradually and knead the cake dough. Stir until the dough begins to lag behind the pan. Divide the prepared dough into 2 parts, roll out each on a floured work surface and bake 2 cakes in an oven preheated to 200 ° C.

Transfer one baked crust to a flat dish, brush liberally with mayonnaise. Spread the liver cream and half the chopped green onions evenly on it. Cover with another crust on top, brush it with mayonnaise, spread the cheese grated on a medium grater and sprinkle the surface of the cake with finely chopped boiled egg and green onions.

Place the finished cake in the refrigerator for several hours to soak.
