Valencia will celebrate the first nutritional show cooking in our country.

The initiative is the result of the collaboration of the Department of Economy, Industry, Tourism and Employment of the CCAA of Valencia and the University of Valencia (UV).

Different dishes will be prepared, as they are made daily in hotel establishments, but with the particularity of preparing them in front of the diners who will then taste and taste.

Cook and diner will achieve an unprecedented interaction where the sensory experience will be the object of further analysis.

The culinary creation and nutritional analysis team will be made up of three people:

  • A food science and technology specialist.
  • A dietitian-nutritionist.
  • A psycologist.

All the moments will be important and the production processes will coexist with taste, sight, smell, touch and hearing, to combine the experience with acidic, sweet or salty tastes in search of a feedback of sensations.

All the steps from the raw food, its preparation or the knowledge of the raw material will be the subject of direct debate while preparing the food, achieving an unprecedented study of techniques of Neurofeedback.

These forms of emotional visualization are part of the project being carried out by the Gastronomy research group (GastroLab) of the IInstitute of Materials Science of the University of Valencia ye the University Clinic of Nutrition, Physical Activity and Physiotherapy of the Fundació Lluís Alcanyís.
