You will need:
- 4 cups broccoli florets
- 4 cups cauliflower florets
- ½ cup filtered water
- ½ cup lemon juice
- 2 tablespoons olive oil
- ½ teaspoon dried oregano
- ½ teaspoon sugar
- 1 clove garlic
- ½ cup pitted olives, chopped
- ¼ cups sun-dried tomatoes

Choose sun-dried tomatoes stored in an airtight container rather than oil. If you come across too dry tomatoes, put them in boiling water for 15-20 minutes before using
Place broccoli and cauliflower florets in a double boiler or place in a colander over a saucepan of boiling water. Cook vegetables for no more than 5 minutes. Place the cabbage in a deep salad bowl. In a separate bowl, combine lemon juice, olive oil, pass the garlic through a press and add to the dressing along with sugar, a pinch of salt and oregano. If you want to add a light honey flavor to the salad, add the same amount of honey instead of sugar. Season the vegetables and place the bowl in the refrigerator for 20-30 minutes. Add olives and tomatoes to the salad before serving.
Cod with lemon crust and spinach garnish

Bake the fish for 10 minutes.
While it’s cooking, tidy up the side dish. Heat the remaining oil in a deep skillet. Place the garlic cloves, previously cut in half and crushed with the back of a wide knife. Cook the garlic until it is golden brown and starts to smell. Add spinach leaves, pour in lemon juice, season with the remaining salt and a pinch of pepper. Cook the spinach, stirring frequently, for 3-4 minutes. Serve the fish with spinach, garnish with another lemon if desired.
