Sugar Gooey Lemon Cookie Recipe
This sweet cookie has a great viscous middle and light lemon aroma. You will need: – 2 and ¼ cups of wheat flour; – ½ teaspoon of baking soda; – 1 teaspoon baking powder; – ½ teaspoon of salt; – 2 cups granulated sugar; – 60 grams of soft cream cheese; – zest of 1 lemon; – 6 tablespoons unsalted butter, melted – 1/3 cup vegetable oil; – 1 large chicken egg; – 1 tablespoon of full-fat milk; – 1 tablespoon lemon juice; – 1 teaspoon of vanilla extract.
Sift the wheat flour, baking soda, baking powder, and salt into a dry, clean bowl. In another bowl, combine 1 and ½ cups granulated sugar, lemon zest and cream cheese, pour in melted butter and whisk into a single mixture, add egg, lemon juice and milk and beat again on medium speed. Using a silicone spatula, carefully combine the dry and wet ingredients.
Pour the remaining sugar into a shallow bowl. Take two tablespoons each, shape into a ball and roll in sugar. Place the cookies on a baking sheet lined with baking paper, 2-3 centimeters apart. Lubricate the bottom of the glass with vegetable oil and press it on the balls of dough. Bake the cookies in an oven preheated to 180 degrees for 10-15 minutes. The cookie should rise and the tops should be slightly cracked. These cookies are served chilled.
These cookies should be baked on the middle rack of the oven.
Lemon Olive Oil Cookie Recipe
Even young children and those with dairy allergies can serve these flavorful cookies. Take: – 500 grams of wheat flour; – 200 grams of powdered sugar; – zest of 1 lemon; – 1 gram of vanilla essence; – 250 ml of light olive oil; – 50 ml of filtered water; – 4 large egg yolks; – a pinch of salt.
You can replace olive oil with another neutral vegetable oil, for example, grape seed, avocado, safflower
Sift wheat flour, salt and powdered sugar into a large bowl, making a depression in the center. In the bowl of the food processor, beat the water with the egg yolks, add vegetable oil in a thin stream until a stable emulsion is formed. Pour it into a well and mix with a silicone spatula into a single mass. Knead into a smooth, homogeneous dough, divide into 4 balls and refrigerate for 15 minutes. Remove the balls one at a time, roll out on a floured surface into rectangles 3-4 mm thick and cut with cookie cutters. Bake on a baking sheet covered with parchment in an oven preheated to 175 degrees for 13-15 minutes.
