A delicious appetizer lecho is a European dish, whose homeland is considered to be Hungary. Nevertheless, today it is loved throughout Europe, and in Asia and even in the Middle East. Traditionally, lecho is considered a separate dish and is used in Germany and Hungary as a side dish. Lecho is ideal for any meat, fish, white bread, scrambled eggs and smoked meats. Its delicate taste will refresh even boiled vegetables.
The classic lecho recipe contains only these ingredients:

Recipe number 1 Lecho with spices
This lecho recipe without vinegar and oil will appeal to even real gourmets. Initially, you need to prepare the ingredients:
- Meaty tomatoes – 4 kg;
- Salad sweet pepper – 1,5 kg;
- Medium-sized onion – 0,2 kg;
- head of garlic;
- Allspice – 5 peas;
- Lavrushka – 7 leaves;
- Ground red pepper – 0,5 tsp;
- Sugar – 3 tbsp. spoons with a slide;
- Salt – 1,5 tbsp. spoons.
Cooking lecho according to this recipe takes 50-60 minutes without cooking time. First prepare the tomato juice. Tomatoes are washed well, the stalk is cut out and chopped in any convenient way. It is best to first get rid of the skin on the fruit. Now this gruel is poured into a saucepan and put on fire.
Meanwhile, the onion and pepper are washed and cut: onion in half rings, pepper in cubes. Tomato gruel is boiled over low heat after boiling for about 20 minutes. Only now you can add onion to it and mix. After five minutes, add pepper cubes and all spices. Garlic is introduced last, 5 minutes before the dish is ready. In total, vegetables should simmer for 20-25 minutes. All! Under lecho, you can turn off the fire and pour it into sterilized jars.

To prepare this delicious appetizer you will need:
- Fleshy tomatoes – 3 kg;
- Sweet pepper with a thick wall – 2 kg;
- Sand sugar – 1 glass;
- Salts – 2 tbsp. spoons without a slide;
- Head of fresh garlic;
- Ground black pepper – on the tip of a dessert spoon.
Black pepper in this case acts as a spice, it sets off the taste of the snack. Its average amount is 1 dessert spoon.
Since it is not difficult to prepare lecho according to this recipe, no more than an hour should be allocated for the cooking process. First, prepare the tomato puree. It should be thick and fragrant. It is poured into a saucepan and put on fire. Boiled mashed potatoes should be boiled over low heat for at least 15 minutes. In the meantime, the hostess will have time to prepare the pepper. You can cut it in different ways, as you like. As soon as the puree is boiled, pepper, sugar and salt are added to it, everything is mixed and boiled for half an hour. 10 minutes before the end of cooking, pepper and garlic are introduced into the puree. - Fleshy tomatoes – 3 kg;
- Sweet pepper – 1 kg;
- Sugar – 3 tbsp. spoons with a slide;
- Salt – 1 tbsp. a spoon;
- Garlic – 1 head;
- Parsley – 1 large bunch;
- cilantro – 1 bunch;
- Ground black pepper – 1/3 teaspoon;
- Lavrushka — 4 leaves;
- Allspice – 5 peas;
- Carnations – 4 inflorescences.
This is one of those recipes that can sink into your soul. Lecho can be eaten with spoons, especially with meat dishes. Standard preparation begins with chopping meaty tomatoes of good quality. The stalks must be removed, the tomatoes are cut into cubes with or without the skin. Now put the tomatoes in a saucepan and bring to a boil.
At this time, you can prepare the pepper, peel the garlic. Tomatoes under thermal exposure will give juice, then pepper is added, everything is mixed. Cook on low heat for 30 minutes. What if you like the recipe, but it does not contain oil or acetic acid? In order for such an appetizer to be stored all winter, several prerequisites must be met:
- jars and lids must be thoroughly washed with a special tool, it is also good to use baking soda for pre-treatment;
- it is imperative to sterilize both jars and lids, this will kill all remaining microbes;
- having rolled lecho into jars, it should be stored only in a cold place, for example, in a cold cellar or refrigerator. The optimum temperature is +5 degrees.
As a rule, such snacks are not closed in large numbers, and banks open only on major holidays. Remember to thoroughly wash vegetables, especially herbs. It is washed in a colander in several waters. The more sterile the dishes and ingredients are, the more likely it is that the lecho will not ferment, and you will enjoy its excellent taste in winter.
