Lenten pancakes are prepared without eggs and milk, using various fillings from fruits, berries, vegetables and mushrooms. Traditionally, the Orthodox use recipes for such pastries during the period of Great Lent. In addition, products made from low-fat dough can be used as part of certain diets, in particular vegetarian ones. Using a variety of cereal flours and delicious fillings will help create amazingly varied baked goods.

Cooking the dough for lean pancakes

There are various recipes for lean pancake dough, and one of the most popular and simple ones is based on the use of baking soda. To prepare the dough, you will need the following set of products:

– wheat flour (1 glass); – buckwheat flour (1 glass); – soda (0,5 teaspoon); – water (0,5 l); – table salt (1/4 teaspoon); – citric acid ( 1 pinch); – refined sunflower oil for frying.

Season with salt and stir well to completely dissolve the salt crystals. Sift the flour through a fine sieve and pour warm water in a thin stream with constant stirring. Add citric acid, baking soda. Let the dough rise. Grease a preheated cast iron skillet with vegetable oil and fry the pancakes on both sides until lightly browned.

Prepare a variety of fillings so that the lean table delights with its wealth and is not boring. For filling pancakes, you can, in particular, use buckwheat or rice porridge and mushrooms. Take these products:

– dry mushrooms or talkers (100 g); – buckwheat or rice (1 cup); – onions (3 pcs.); – garlic (2 cloves); – refined sunflower oil for frying.

Boil the mushrooms and discard in a colander to drain the liquid. Cook the porridge in the broth, and scroll the mushrooms through a meat grinder with a large grill. Fry finely chopped onion in vegetable oil, mix it with mushrooms and buckwheat and put the stuffed pan in the oven for 15 minutes. When the resulting mass has cooled, put the crushed garlic in it, mix everything well.

Vegetables such as eggplant or zucchini, onions, potatoes, and cabbage are excellent fillings for pancakes. Bake the eggplants in the oven on a baking sheet or cook in a double boiler, boil the potatoes in salted water, chop the cabbage. Sauté the chopped onion separately. Mix all the ingredients of the filling, salt and pepper to taste and bake in the oven (holding time – 10-15 minutes).
