Cooking recipe: lazy dumplings

Any good cottage cheese is suitable for making dumplings, but it is still advisable to take homemade and not too fatty (9-15%, no more). In order for the dough to acquire a uniform consistency, and lazy dumplings to turn out softer and more tender, it is recommended to pass the cottage cheese through a meat grinder, rub through a sieve or chop in a blender. This will make the dough easier to form.

Make lots of lazy dumplings and store them in the freezer. They will be very useful at the moment when you really want to have a snack. It will take about fifteen minutes to prepare the dough, and three minutes to cook.

Add 2 tablespoons of granulated sugar, semolina and eggs to the pounded cottage cheese, mix well. You can add a little vanillin to the dough, then the dumplings will acquire a bright sweet aroma. Then sift the wheat flour so that it is saturated with oxygen, start adding it in small portions to the curd mass. The amount of flour depends on your preference. If you want tender and soft dumplings, three tablespoons of flour will suffice. If you want the lazy dumplings to be denser, add more flour.

It is best to knead the curd dough with your hands, this is how you can feel the desired consistency. The dough should be firm, but not sticky. Separate a small piece from it, roll into a thin sausage and cut into small circles. Make a small dent in the center of each lazy dumpling. Do the same with the rest of the dough.

Now it’s time to boil your cooking. Put a large pot of water on the fire, lightly salt and let it boil. Next, lower the required amount of dumplings and cook for three minutes (after they float to the surface), stirring occasionally with a spoon so that they do not stick together. Catch the finished dumplings using a slotted spoon, arrange on plates and serve with sour cream or butter. Honey and berry jam also go well with dumplings.
