Lasagna bolognese: recipe for cooking. Video
Lasagna is a traditional Italian dish that is made from several layers of dough mixed with filling and poured with sauce. The result is a casserole pie stuffed with mushrooms, vegetables or meat. Usually lasagne is made with béchamel sauce and mozzarella, parmesan and ricotta cheese. There are many cooking options for this dish, and the most popular of them is lasagna bolognese.
To prepare a classic bolognese lasagna, you will need the following ingredients:
- lasagna sheets – one pack
- Parmesan cheese – 150-200 grams
For bolognese sauce you will need:
- minced meat – 600-700 grams
- fresh tomatoes – two pieces
- tomato paste – 2 tablespoons
- ground pepper – to taste
- salt to taste
- olive oil
For the béchamel sauce, take:
- milk – 1 liter
- butter – 120 grams
- nutmeg to taste
- flour – 3 tablespoons
This recipe lists Parmesan cheese, but you can substitute any hard cheese for it. However, in this case, the taste of the dish may differ slightly from the traditional lasagna bolognese.
First, cook the lasagna dough sheets according to the instructions on the package. After that, fill the boiled sheets with cold water. Now you can start preparing the filling of the bolognese sauce, which will be the filling of the lasagna at the same time. To do this, fry the minced meat in a preheated pan with olive oil. In the meantime, prepare the tomato dressing. After washing the tomatoes, peel them off, and then chop them in a blender or with a knife. After mixing the tomatoes with tomato paste, add the mixture to the minced meat, pepper and salt. Continue cooking the sauce until it thickens.
After that, prepare the béchamel sauce: melt butter in a saucepan, mix it with flour, then add milk in small portions. Boil this sauce also until thick.
Remember to stir the sauce constantly to avoid flour clumps.
After preparing the sauces, start baking the lasagna. Pour some white béchamel sauce into a baking dish, then spread it thoroughly along the bottom. Overlap with 2 sheets of dough. Brush it with white sauce, sprinkle with grated Parmesan cheese, and on top of the latter, gently pour a layer of bolognese sauce. Repeat this layer of lasagna in the same order 3 more times. In total, you should end up with at least 4 layers, and ideally 6.
Pour the top, last, layer with white sauce, then sprinkle thickly with grated cheese. Place the lasagne dish in the preheated oven and bake for about 40 minutes. If you reproduce the lasagna dough recipe and the steps for preparing this dish without errors, you will end up with a classic bolognese lasagna.
Homemade lasagna bolognese recipe
What if you are having trouble finding Parmesan cheese or ready-made lasagna sheets? In this case, a homemade lasagna bolognese recipe comes in handy. Moreover, the sheets for her can be made with your own hands.
To prepare the dough, you will need:
- flour – 300 g
- raw eggs – 3 pieces
- salt – 1 tsp
- spinach – 100 g
For bolognese sauce you will need:
- minced meat – 500 g
- tomatoes – 5 pieces
- olive oil – 4 tablespoon
- tomato paste – 2 tablespoons
- salt to taste
- black pepper – to taste
To make béchamel sauce:
- milk – 1 liter
- butter – 150 g
- flour – 3 tablespoons
- nutmeg to taste
- salt to taste
In addition, for the cheese layer, you will need Parmesan cheese or another very hard cheese – 150 g.
First, prepare the lasagna dough. Its recipe includes spinach, which turns the dough green. Thaw it and grind it in a blender. Next, pour the sifted flour on the table with a slide and make a small hole in it. Pour eggs into this well, add salt and chopped spinach. Knead the dough until it becomes elastic and no longer sticks.
Add flour if necessary, as the specified amount may not be enough, because the gluten content may vary. After kneading the dough well, wrap it in plastic wrap and leave to rest for 30 minutes.
Then, after sprinkling flour on the table, divide the dough into 3 parts. Roll each of them into a thin layer 1–1,5 mm thick. From the rolled out layers, cut rectangular plates approximately 10 × 7 cm in size. Boil the plates one by one in salted water, rinse and lower them in a saucepan or bowl of cold water.
The recipe for the lasagna bolognese remains the same, so cook in the same way as in the previous version. First, fry the minced meat in olive oil for 10 minutes, then add mashed potatoes from chopped tomatoes and tomato paste to it. Season with salt, pepper, stir and cook for another 5 minutes. To make the béchamel sauce, mix the melted butter and flour in a saucepan, and then, stirring constantly, cook the sauce, adding milk to the saucepan.
When the dough sheets and lasagna sauces are ready, start collecting them. Grease a baking dish with butter and pour a little béchamel milk into it. Then overlap the sheets of dough, sprinkle them with grated cheese and pour over the bolognese sauce (that is, minced meat with tomato). Put the dough on top again, pour in the white sauce, sprinkle with cheese, top with the béchamel sauce. You should have 4-5 of these layers in total. Sprinkle the lasagna very thickly on top with grated cheese, then place the dish with the dish in the preheated oven and leave for 40 minutes. That’s it, your Italian bolognese lasagna is ready!
