  1. The leaves are separated from the stems, revised. If the quality of the raw material is in doubt, then it is rejected.
  2. The green mass is washed under the tap.
  3. In order for small insects to float to the surface, the grass is placed in a wide container and poured with salted water.
  4. Cover with a lid, leave for 15 minutes.
  5. The workpiece is thrown into a colander and allowed to drain the water. Lay out on a paper towel to evaporate moisture.

The classic Dagestan style dumplings with nettles is the most common and simple recipe. It requires a minimum of ingredients.

Products for filling:

  • chopped nettle – 500 g;
  • large onion – 2 pc.;
  • sunflower oil and butter – 1 tbsp. l.
  • egg – 2 pcs.

Preparation:

  1. Onions are chopped.
  2. Add oil to the pan, pour the onion blank.
  3. Roast until dark yellow.
  4. Eggs, onions are added to the green mass, mixed.

The filling is ready. Knead the dough from the following components:

  • flour – 1 kg;
  • water – 250-300 ml;
  • sunflower oil – 3 st. l .;
  • egg – 1 pcs .;
  • salt – 1 tsp.

Cooking process:

  1. Sift the flour through a sieve into a wide bowl.
  2. Make a small indentation in the center.
  3. Add salt.
  4. The egg is broken into water, beaten.
  5. Pour the liquid into the flour and add the oil.
  6. Mix well on a flat surface covered with flour.
  7. Put the dough in a bag, tie it up and leave it for 20-30 minutes. in a refrigerator.

  8. The cooled mass is stirred again.
  9. Cut off a piece and roll out a long thin cylinder.
  10. Divide the workpiece into equal small parts.

Fresh nettle dumplings with nuts

You can cook dumplings with nettles and walnuts, they are not inferior to meat in taste, but the nutritional value is much higher.

Toppings:

  • walnut kernels – 250 g;
  • onion – 3 pcs .;
  • chopped nettle – 300 g;
  • garlic – 4 lobules;
  • salt and pepper to taste;
  • ghee – 2 tbsp. l. (can be replaced with vegetable);
  • egg – 2 pcs.

Preparing the stuffing for dumplings:

  1. Finely chop the onion and fry in oil until yellow.
  2. Garlic is crushed.
  3. Nuts are crushed with a blender or using a meat grinder.
  4. Eggs, garlic and fried onions are added to the nettle mass.
  5. All mix, salt and pepper to taste.

The filling for dumplings is set aside and the dough is kneaded. Required Ingredients:

  • flour – 500 g;
  • water – 150 ml;
  • egg – 1 pcs .;
  • salt – 1 tsp.

Knead the dough. Leave it in the bag in the refrigerator for 15 minutes. Then mix again. In 10 minutes. you can mold disks for dumplings. Put the filling in the center of each cake, pinch the edges. It can be made in the form of a traditional dumpling or in the form of a dumpling. Cook kurze in salted water.

Important! The dish is prepared immediately after sculpting; this recipe is not suitable for freezing, because the nuts lose their taste.

With meat in Polish

To prepare the dish, you can take the finished dough (300 g) or make it yourself:

  • flour – 250 g;
  • water – 70 ml;
  • egg – 2 pcs .;
  • salt – ½ tsp.

The finished dough is wrapped in cling film and left for 20 minutes, then mixed again. Molded in the form of discs, the size of which is slightly larger than for ordinary dumplings.

Toppings:

  • nettle – 150 g;
  • minced pork – 150 g (you can take another one);
  • melted fat (lard) – 1 tbsp. L.;
  • onion – 2 pcs .;
  • pepper, salt to taste.

Preparation:

  1. Nettles are boiled in salted water for 10 minutes.
  2. To get rid of water, recline in a colander.
  3. The onion is finely chopped and sautéed in pork fat until golden brown.
  4. Mix the green mass and onions, taste for salt, pepper.
  5. Add minced meat to the nettle, mix.

The dough is rolled out in the form of a thin disk and cut into circles. They’re making a kurze. Boil in salted water for 10 minutes.

Kurze with nettle and cottage cheese

The dough is made in the traditional way, without adding an egg. The mass should be well mixed and kept in the refrigerator for at least 30 minutes. You can cook nettle kurze with the addition of cottage cheese. For the recipe you will need:

  • nettle – 300 g;
  • egg – 2 pcs .;
  • curd – 200 g;
  • vegetable oil or ghee – 2 tbsp. l.;
  • salt and pepper – to taste.

Preparation of the filling:

  1. Finely chop the onion, put it in a frying pan with butter, let stand until soft.
  2. A blank from the plant is added to the pan. Stew with onions, stirring constantly, no longer than five minutes.
  3. At the end of the process, salt, add pepper.
  4. Pour into a bowl and let cool completely.
  5. Add eggs and cottage cheese.

Knead the dough, mold dumplings of any convenient shape. Salted water is allowed to boil, kurze is put in, boiled for 7–10 minutes. According to the recipe, you can prepare a semi-finished product in large quantities and place it in the freezer.
