Kissel from starch: how to cook? Video

Kissel is an old Russian drink with a history dating back 1000 years. Initially, it was prepared in Russia from oats, rye or wheat, spending several days on its preparation. However, with the import of potatoes to our country and the production of starch from it, it became much easier to cook jelly. Sweet fruit and berry drinks appeared in cooking, which are popular on the Russian table to this day.

Kissel from starch: how to cook?

Starch gives the characteristic jelly consistency. To correctly calculate how many spoons of starch per liter of water you need for jelly, you need to focus on the density of the drink. For liquid jelly, it is enough, for example, to put 1 spoonful of starch, for jelly of medium density, you can put 2-3 tablespoons, for very thick – 4.

According to this recipe, you can cook blueberry, raspberry and strawberry jelly.

To prepare it you will need:

  • berries – 250 g
  • potato starch – 3 tbsp. spoons
  • sugar – 1 glass
  • water – 1 liter

Sort the berries and rinse under running water. Squeeze the juice out of them and drain into a non-oxidizing dish. Cover the juice with a lid.

Put the rest of the berries in a saucepan, cover with warm water and put on fire. Bring to a boil and simmer for 5 minutes. Strain through a sieve and put on fire again. Add granulated sugar to the broth, stir well and bring to a boil again.

Pour the starch into a separate bowl and dilute it with cold water, stirring thoroughly. Strain it and pour it into the berry broth, stirring constantly. Add chilled berry juice there, bring to a boil again and turn off the heat. When the jelly has cooled to room temperature, put it in the refrigerator.

Kissel is a high-calorie, but unusually healthy drink. The berries and fruits from which it is cooked enrich the body with vitamins, and starch helps to restore the stomach in case of gastritis or ulcers

For cooking you will need:

  • milk – 1 liter
  • sugar – ¾ glass
  • cocoa – 2 tbsp. spoons
  • starch – 2-3 tbsp. spoons
  • vanilla to taste

Bring the milk to a boil. Put the sugar, pre-mixed with cocoa, into it. Stir and add some vanilla to it.

Dissolve the potato starch in a small amount of cold milk and pour it in a thin stream into the boiling milk with cocoa. Bring to a boil, stirring constantly. Remove from heat and pour into cups or glasses.

So that there is no foam in the glass with jelly, sprinkle the drink with a thin layer of powdered sugar

For cooking you will need:

  • honey – 300 g
  • lemon juice – 4-5 tbsp. spoons
  • sugar – 1/3 cup
  • potato starch – 3 tbsp. spoons
  • water – 1 liter

Dissolve half of the honey in hot water, add sugar and bring everything to a boil. Dissolve the potato starch in cold boiled water and pour it into the drink, stirring constantly.

Remove the jelly from the heat, add the remaining honey and lemon juice to it. Mix everything well and refrigerate.
