Khachapuri is a national Georgian dish resembling pies or cheesecakes. The filling always contains cheese, preferably brine. Each region of Georgia has its own recipe for baking – khachapuri differ in shape, additions to the filling and type of cheese. Today, khachapuri is baked both in catering establishments and at home, and the classic recipe is often simplified.
Khachapuri with cheese in Georgian
The recipe for classic khachapuri necessarily includes matsoni, a Georgian fermented milk drink. The dough is kneaded with soda, and only enough flour is added to keep the dough in shape. As a result, it turns out to be very light, and the finished products literally melt in your mouth.
You will need: – 500 ml of yogurt; – 1 egg; – 2 glasses of fresh milk; – 0,5 teaspoon of baking soda; – 0,25 teaspoon of salt; – 4 cups wheat flour.
For the filling: – 500 g feta cheese; – 2 eggs; – 50 g butter.
Cheese can be replaced with another pickled cheese, for example, chanakh or Imeretian
Soak cheese in cold water for several hours to remove excess salt. While the cheese is getting the flavor you want, start making the dough. Mix the matsoni with milk, add eggs, soda and salt. Sift the flour and stir it into the dough in portions until it sets and starts to hold its shape slightly.
Do not knead the dough for too long, it should remain soft and fluffy.
Mash the cheese until a paste and mix with butter until smooth. Form cakes from the dough, put the filling on them in portions and pinch the products, giving them the shape of rectangular or elongated closed pies.
Heat the butter in a frying pan, put the khachapuri seam side down, place the pan on an open fire with hot coals and bake for about 10 minutes, covered with a lid. Then turn the khachapuri over, brush with butter and bake until tender.
Try another popular khachapuri baked in the form of a half-open patty. An egg is released on top of the cheese filling, such products look very beautiful. Bake khachapuri according to a simplified recipe, for example, from ready-made puff pastry.
You will need: – packaging of ready-made puff pastry (preferably yeast-free); – 500 g of brine cheese; – 8 eggs.
If the cheese turns out to be too salty, soak it in cold water, then rub into a paste. Roll out the puff pastry and cut into 8 squares. Spoon the cheese filling on each square and pinch the edges, turning the blanks into elongated boat patties with an open center. Spread the khachapuri on a baking sheet moistened with water. Place the baking sheet in an oven preheated to 200 ° C and bake for 15 minutes.
Remove the baking sheet from the oven. Release an egg in the middle of each product and return the khachapuri to the oven so that the egg grabs, but the yolk remains runny. Serve hot and garnish with herbs.
