Kefir dumplings: how to make dough? Video
Kefir dumplings have such a delicate and pleasant taste that even the most capricious and fastidious children often eat them with great pleasure. This dish is very healthy and easy to prepare, moreover, it is ideal for both babies with a delicate stomach and adults.
Dough for kefir dumplings
The recipe for kefir dumplings requires the use of inexpensive and readily available ingredients:
- 5 cups wheat flour
- 0,5 l kefir
- 1 egg
- pinch of salt
- 1 tbsp sugar
- 1 tsp Soda
In a deep bowl, combine the sugar and raw egg, then whisk together. Sift the flour and add a little to the bowl, stirring constantly. Then add baking soda and salt, stir again.
Please note: it is very important to take quick soda and not add vinegar to the dough at all, otherwise the dish will have a specific aftertaste
Distribute the flour so that a dimple forms in the center of the bowl. Pour kefir into it little by little, constantly stirring the dough, and then knead it with your hands. The dough should be firm, elastic and not too sticky. When you finish kneading it, transfer to a bowl, cover with a towel and leave on the table for 30-40 minutes. Do not put the dough in the refrigerator.
Filling options for tender dumplings
You can make dumplings with fruits, cottage cheese and other fillings to your liking. Remember only that tender dough does not tolerate coarse additives, so it is better to refuse from potatoes with onions or pieces of boiled meat.
Try making a light curd filling.
To do this, you need to take the following products:
- 350 g of cottage cheese
- 3 tbsp sugar
- 100 г изюма
Pour hot water over the raisins and leave for 10-15 minutes. Then mix the cottage cheese with sugar and try to make the mass homogeneous by rubbing it thoroughly. Rinse the finished raisins, add to the cottage cheese and mix the filling again.
If the mass seems too dry to you, you can add raw yolk or 2 tablespoons to it. sour cream
Berry filling can also be a good option. Fresh berries need to be washed, mixed with sugar, and then added to dumplings. If we are talking about cherries, they should be peeled. Juicy berries can be mixed with sugar and left for several hours to drain the juice, then use them as a filling, and pour over the finished dumplings with liquid.
Cooking dumplings with kefir
When the dough and filling are ready, start sculpting. Roll out the dough and cut out the circles with a glass, or cut off pieces and roll each piece individually. Then place some filling in the center of each circle and pinch the edges. Be careful: if there is too much filling, the tender dough will break.
Kefir dumplings are best not dipped in boiling water, but steamed. If you don’t have a steamer, fill a regular saucepan with water, pull cheesecloth on top, and when the water boils, add the dumplings and cover. They will be ready in 15–20 minutes.
