It gained popularity primarily in Scandinavia, where attention is drawn to its high content of fibre, vitamins C and K, protein, calcium, potassium and very strong antioxidants. Kale is simply a variety of cabbage with long, wavy leaves.

Excellent protection against cancer

Sulforaphane, an antioxidant contained in kale and other cruciferous plants, has a great anti-cancer effect. It protects against colon, prostate, lung and breast cancer. The best way to cook kale in such a way that it retains its valuable properties is to steam it for four minutes.

In this plant we will also find indoles that inhibit the secretion of active estrogens, which prevents the formation of breast cancer, and carotenoids that inhibit the activity of free radicals and may reduce the risk of cancer of the esophagus, larynx, mouth, and bladder.

Also, vitamin K present in kale inhibits the development of cancer, mainly of the liver, gallbladder, ovaries, colon and breast. According to scientists, a deficiency of this vitamin can cause some cancers.

Body detox

The green pigment present in kale, i.e. chlorophyll, masks the yellow, red and orange colors imparted by carotenoids. It also has a strong antioxidant effect and supports the cleansing of the body, while reducing the penetration of harmful compounds into the body.

This plant contains elements and vitamins that support the work of the cardiovascular system:

  • Potassium – clears blood vessels, reduces pressure,
  • Calcium – supports the pumping of blood to various body cells,
  • Vitamin C – strengthens blood vessels, reduces cholesterol,
  • Vitamin K – plays a role in blood coagulation, may reduce painful periods.

Thanks to the content of beta-carotene, kale supports the health of our eyes. Vitamin A is involved in the vision process, prevents the formation of night blindness, eye damage, excess solar energy in the eye area.

It also protects against the formation of duodenal and gastric ulcers, destroying bacteria that can cause irritation of the mucous membrane of the digestive system.
