Beef is one of the most popular types of meat. It can be lean to moderately oily, tender, or very rich in flavor. However, many housewives complain that it is difficult to cook beef: the meat is too tough. This lack of healthy meat is easy to fight – choose proven recipes and learn a few tricks to keep the beef juicy.

Meat preparation

Try to cook a whole piece of beef, if cooked properly it will be very juicy. Choose a suitable part of the mascara. The best way to bake is a ham or rump. This is lean meat, so you will need to add a little fat to it. Use lard, it will add juiciness to the beef, and flavor to the herbs.

Prepare the meat: rinse it, pat dry with paper towels. Mix a small amount of flour with dry mustard and rub this mixture over the beef. Put sprigs of thyme and parsley on a piece of beef, then tightly wrap the meat with a layer of bacon and tie the resulting bundle with coarse thread. Rub the lard with salt.

Try another way. Cut a broken piece of bacon into thin strips, thread them into a scoring needle and “sew” a piece of beef, covering it with even stitches. Rub the piece with salt and ground pepper before processing. The original taste of the beef will be given by mashed ginger with garlic, grease a piece of meat with this mixture and let it lie down for about half an hour.

Place the finished beef on a wire rack, place a baking tray under it to collect the meat juice. Fry the meat at moderate heat – 170 to 200 ° C, so it cooks more evenly and becomes tender. Sprinkle the melted juice on the beef while cooking. Calculate the roasting time: A 900g piece of boneless meat will roast for about 50 minutes. If you prefer well-done beef, lengthen the cooking time by another 10-15 minutes.

To check the doneness, pierce the thickest part of the piece with a fork. Pink juice will indicate medium cooking, and almost clear indicates that the meat is completely cooked. Remove the beef from the oven and cover with foil for a quarter of an hour. After such a procedure, the meat will be easy to cut, and the tasty juice will remain inside.

Serve the baked beef by cutting it into chunks and topping it with a sauce made from the melted meat juice.
