It’s all in the case! What to cook with green tomatoes

Green tomatoes are not an illiquid product or a food misunderstanding, as some believe. In skillful hands, they turn into an excellent ingredient for all sorts of dishes and preparations. 

We have selected the most interesting recipes that can be prepared from green tomatoes. 

Green tomato Gorloder appetizer

You will need one and a half kilograms of green tomatoes, horseradish root – 150 g, about 50 grams of fresh dill, salt (50 g), sugar (30 g), garlic – 130 g, hot pepper – 30 g. 

 

Mince tomatoes, garlic, horseradish root, hot peppers and dill through a meat grinder. Add salt and sugar. Mix everything well to dissolve the sugar. then sterilize the jars and lids in the oven at 100 C for 10 minutes. Divide the mixture into jars and cover with lids. You need to store this snack in the refrigerator. 

Green tomato jam

Take green tomatoes – 1 kg, sugar – 1,2 kg, water – 1 glass, citric acid – on the tip of a knife. 

Wash the tomatoes and cut into slices, you can remove the seeds. Boil in boiling water for 3 minutes. Throw in a colander. Cook the sugar and water syrup separately. Pour the hot syrup over the tomatoes and let sit for 3 hours. Then cook the jam for 20-25 minutes, remove from heat and let it brew for another 2 hours. So repeat 3 more times, then cook the green tomato jam until tender. For flavoring at the end of cooking, add citric acid to the green tomato jam. Pour the jam into sterile jars.

Fried green tomatoes

To prepare this dish, you will need green medium sized tomatoes – 3 pcs. , large egg (slightly beaten) – 1 pc., buttermilk or sour milk – 1/2 cup, corn starch – 1/2 cup, salt – 1/2 tsp, ground black pepper – 1/2 tsp ., flour – 1/2 cup and vegetable oil.

In a bowl, beat eggs with buttermilk (or sour milk). In a bowl, combine the starch, salt, pepper and 1/4 cup flour. Cut the tomatoes into slices about 0,8 centimeters thick. Dip the tomatoes in the remaining flour on all sides. Then dip in buttermilk (sour milk) with eggs, and finally in the starch mixture. 

Then pour the vegetable oil into a large skillet (about 1,5 centimeters high in the pan). Heat oil over medium-high heat to 175 degrees. Dip the tomato slices in the heated oil and fry for about 2 minutes on each side, until golden brown. Transfer the roasted green tomatoes to a paper towel to drain off excess fat. 

When serving hot fried green tomatoes, sprinkle with salt to taste. Serve with tomato sauce or ketchup.
