Is it possible to freeze jellied meat with gelatin

Reading time – 3 minutes.

If you cooked jellied meat, but it did not freeze on its own or the water boiled away, gelatin is added. But what if there is a lot of jellied meat and needs to be frozen for future use? The question arises whether it is possible to freeze jellied meat if gelatin was added to it to solidify.

We answer: you can. When frozen, gelatin retains its binding properties and does not lose them when thawed. As an unpleasant effect, gelatin slightly clumps when defrosting. But after defrosting, it is better to boil any jellied meat in order to give it a festive look, and then the gelatinous part with gelatin will restore its usual appearance. Another nuance – the transparency of the broth may suffer a little, but this is easy to do: serve the jellied meat upside down – with the meat part up, then it will seem transparent. Or garnish it with eggs or boiled carrots.
