Is it possible to cook rabbit soup
Rabbit meat is still considered a delicious meat and is used for holiday dishes – it is baked, fried and stewed, depending on the available pieces of carcass. Rabbit soups are cooked less often due to their dilettanism, since soups in Russia are rarely seen at a festive feast. This is the only reason why there is any doubt about whether to cook rabbit soup. In other words, “too bold”.
There is a doubt whether it is possible to cook rabbit soup, and because of its specific smell. Still, after all, the rabbit is a relative of the wild hare. But can this smell spoil the soup? Not if the rabbit is soaked for a couple of hours with a couple of drops of 9% vinegar.
Rabbit meat, meanwhile, is great for making soups. Legs, back and brisket – the fatty parts with bone – will give an excellent broth to the soup broth. When cooking, chop the rabbit into several pieces to make it easier to cook – and cook for an hour and a half for the broth. And for a dietary soup, it is better to drain the first broth (which has boiled for a couple of minutes). In the soup, the rabbit goes well with vegetables, cereals, vegetable frosts, noodles, rice.
Rabbit meat is so healthy and digestible that even children can cook rabbit soups. It is important to consider a couple of nuances here. First, after boiling, the broth must be filtered to prevent bone fragments from getting into the soup. And, secondly, the meat should be chopped very finely, and too fatty parts of the meat should be removed from the soup altogether.
